I absolutely love Casseroles or One Dish dinners! This Garlic and Herb Squash Casserole is definitely worth trying out. We used Patty Pan Squash, but it can be made with any type of summer squash. It's the perfect summer dish that can be enjoyed as a main course or as a side with grilled chicken, steak, or pork.
I love making garlic and herb squash casserole, and adding fresh herbs and tomatoes straight from my garden is the best part. Every year, I plant a small herb garden with tomatoes, peppers, and cucumbers in pots. I haven't tried growing squash in pots yet, but it's something I'm interested in doing. The first type of squash I want to try growing is pattypan because it has a great texture, size, and flavor and is one of my favorites.
If you're unfamiliar with them, according to Wikipedia, the name Pattypan is derived from "a pan for baking a patty". I love that the pattypan squash is also known as the UFO squash because of its shape.
How to make this Garlic and Herb Squash Casserole
This Garlic and Herb squash casserole is a breeze to make, just like most one-pan dishes. Simply cut up the squash and add it to a casserole dish along with tomatoes, oregano, garlic, mayonnaise, and parmesan cheese. Baking it all together creates a creamy and flavorful dish that's sure to satisfy.
To start, chop the squash into small, manageable pieces. Next, slice the garlic and detach the oregano leaves from the stems (if fresh oregano isn't available, dried oregano works just as well). Grate the parmesan cheese and rinse the cherry (or grape) tomatoes thoroughly.
In a small casserole dish, arrange half of the squash, tomatoes, garlic, and oregano. Spread half of the mayonnaise over the squash and season with salt and pepper. Layer the remaining squash, tomatoes, garlic, oregano, and mayonnaise on top. Sprinkle with Parmesan cheese and pour ¼ cup of water into the dish.
To cook, preheat the oven to 375 degrees and bake for 45 minutes. Once done, the squash should be soft, and the cheese should be melted.

Ingredients
- 1 Pound Squash (Pattypan or summer squash)
- 2 Cups Cherry Tomatoes
- ⅓ Cup Light Mayonnaise Or Regular Mayo
- 2 Cloves Garlic
- 1 Tablespoon Fresh Oregano or 2 teaspoons dried oregano
- ½ Ounces Parmesan Cheese Grated (about ⅓ Cup Parmesan Cheese)
- Salt and Pepper to taste
Instructions
- Preheat the oven to 375 degrees. Cut the squash into bite-size pieces. In the case of Pattypan squash, first cut it in half and then quarter it.
- Remove the oregano leaves from the stems.
- Chop the garlic
- To layer the casserole, add half of the squash, half of the tomatoes, half of the oregano, and half of the garlic to the casserole dish.
- First, add half of the mayonnaise on top of the squash and tomatoes. Make sure to dollop it evenly. Then, sprinkle salt and pepper to taste, using about half a teaspoon of each.
- Add the remaining squash, tomatoes, oregano, garlic, and mayonnaise.
- Sprinkle some grated parmesan cheese on top and then carefully add ¼ cup of water to the casserole dish.
- Bake in preheated oven (375 degrees) and cook for 45 minutes.
- This dish can be enjoyed as either a main course or a side dish.
