I absolutely love all the seasons, but there's something about autumn that just makes me so happy. The chilly nights and beautiful leaves are just so lovely. Right now, I'm actually taking advantage of all the delicious vegetables from my garden and local farmers' market. It's been so bountiful!
Sweet summertime includes sunshine, asparagus, and summer squash!!
We are so lucky to have a nearby farmers market where we can purchase asparagus, corn, and summer squash. Recently, we found asparagus and Pattypan Squash again, which made us happy. Last week, we tried Roasted Herb Garlic Patty Pan squash, which tasted divine with our fresh tomatoes and spicy peppers. Then, we made Garlic Herb Pattypan squash summer Bucatini Pasta by tweaking the recipe slightly, which turned out to be out of this world. So, this week, we decided to prepare Garlic Herb Asparagus Featuring Summer Squash. Yes, we have a fondness for squash!
Garlic Herb Asparagus Featuring Patty Pan Summer squash
Pattypan is our preferred type of Summer Squash. This year, we were only able to find yellow pattypan, but they are available in various colors, including yellow, dark green, white, pale green, and even bi-colors. They can be cooked in any size, ranging from teeny tiny to around 5 inches across. We have discovered that they can be chopped, sliced, cut into chunks, or hollowed out and stuffed. For our Garlic Herb Asparagus featuring summer squash, we opted to slice the squash and place it on a baking sheet. To enhance the taste, we included optional peppers and sliced the squash as per our recipe.
One Pan Recipe Garlic Herb Asparagus and summer squash!!!
On a baking sheet, we arranged sliced squash and asparagus. Then, we sprinkled fresh oregano and sliced garlic, drizzled olive oil, and added a pinch of salt.
After baking for 25 minutes, we removed the dish from the oven, added goat cheese, and served it. The delightful aroma of garlic and oregano cooking filled the room. The creamy and buttery taste of the dish, combined with the fresh flavors, made us crave more!
Using pattypan squash in this summer casserole recipe elevates it to a new level, providing a delicious and satisfying taste. I am confident that Garlic Herb Asparagus Featuring Summer squash will continue to be a favorite of mine until the end of summer. Another favorite asparagus is shrimp and asparagus and sugar snap peas with asparagus.

Garlic Herb Asparagus and Summer Squash one pan dish!
A Few Things We Use
Ingredients
- 1 ¼ Pound Pattypan Squash or Summer squash
- ¼ Cup Fresh Oregano Or 2 Tablespoons dry oregano
- 1 Pound Asparagus About one pound
- 5 Cloves Garlic
- 1 ½ teaspoon Coarse sea salt Salt to taste
- 4 Tablespoon Olive Oil
- 3 Ounces Goat Cheese
- 3 Serano Peppers Optional
Instructions
- Preheat the oven to 375 degrees. Slice the pattypan squash into ¼-inch rounds, snap the ends off the asparagus, chop the oregano, and slice the garlic.1 ¼ Pound Pattypan Squash
- Put Pattypan squash slices on the baking sheet.
- Put Asparagus on top of Squash on the baking sheet.1 Pound Asparagus
- Sprinkle garlic and oregano on top of the squash. If using Serrano peppers, sprinkle them on top.¼ Cup Fresh Oregano, 5 Cloves Garlic, 3 Serano Peppers
- Drizzle some olive oil on the squash. Then sprinkle the salt on top4 Tablespoon Olive Oil
- Bake in a preheated 375-degree oven for 25 minutes. Then, transfer them to a serving bowl.
- Add the goat cheese and mix it with the asparagus and squash.3 Ounces Goat Cheese
- Serve and Enjoy!!!!
