Garlic Herb Roasted Chicken
I'm not sure about you, but transitioning from summer to winter is always a hectic time for our household. Our yard is especially chaotic this year, with an abundance of acorns and leaves falling. However, the arrival of fall means it's soup season, and we require plenty of chicken broth. To achieve this, we roast a chicken, and a garlic herb roasted chicken is a simple yet flavorful option. We put sliced garlic beneath the skin and add fresh herbs inside the chicken, wrapping rosemary around the wings
Since this was our first roasted chicken of the season, we also prepared mashed potatoes, stuffing, and steamed broccoli. We can't wait to enjoy the leftovers, which are always delicious. YUM!!!

There are so many dishes that can be prepared using roasted chicken. One of the dishes we made was a delectable chicken sandwich. This sandwich was not just an ordinary one, as it was topped with balsamic glazed cherry tomatoes and wilted spinach and complemented with creamy Brie cheese, all served on a crispy roll. We also prepared game day nachos and Air Fryer Chicken Taquitos. Lastly, we utilized the remaining chicken to make homemade chicken broth.
With a $9.87 chicken, we had 5 meals and included a big batch of Broth for homemade soup.
Garlic Herb Roasted Chicken
A Few Things We Use
Ingredients
- 6 Pounds Chicken
- 3 Cloves Garlic
- 1 teaspoon Paprika
- 1 teaspoon Cumin
- 1 teaspoon Onion powder
- 1 teaspoon Garlic powder
- ½ teaspoon Black pepper
- 1 teaspoon Salt
- 2 teaspoons Thyme (fresh)
- 2 teaspoons Rosemary (fresh)
Instructions
- To start preparing, preheat the oven to 425 degrees. Next, slice the garlic into thin strips.
- Remove the chicken "packet" from the chicken.
- Slice small cuts into the chicken breast, wings, and legs.
- Insert Garlic into the slices of the chicken
- To season the chicken, sprinkle a mix of paprika, cumin, onion powder, garlic powder, black pepper, and salt over it
- Place fresh thyme inside the chicken
- To add flavor to your chicken wings, try wrapping fresh rosemary around them.
- Put the chicken in the baking dish with the breast side facing downwards. Pour one cup of water into the dish.
- To bake the chicken, preheat the oven to 425 degrees and bake for one hour. After an hour, flip the chicken over so the breast side is up. Then turn down the oven temperature to 375 degrees. Continue baking for another 30 minutes or until the chicken is fully cooked, which can be confirmed with a meat thermometer reading of at least 165 degrees.
- Once you take the chicken out of the oven, allow it to rest for a minimum of 15 minutes.
