We absolutely adore Roasted Garlic It is creamy, sweet, and, best of all, partially spreadable. It is a great addition to roasted Asparagus. The other day, we roasted ten heads (not cloves!) of garlic - I know it sounds like a lot, but roasted garlic is not as harsh as fresh garlic and has a delicious flavor. There are so many things you can do with Roasted Garlic. The easiest and, most amazing way is to spread the roasted garlic (straight out of the cloves) onto a warm, crusty baguette; you will have the BEST garlic bread ever! Other easy ways to use Roasted Garlic are to make Garlic Cheese Tortellini and Garlic Roasted Asparagus.
Roasted Garlic is Amazing!!!
What to do with all this Garlic????
It was great to have a large amount of roasted garlic we felt like kids on Christmas morning. After pondering over the many dishes we could make with the heavenly, roasted garlic, we decided to toast a slice of bread and spread the garlic on it. Then, we roasted some asparagus using the same baking sheet we had just used for the garlic. Additionally, we bought some fresh tortellini and made an amazing roasted garlic cheese sauce. Just writing about these dishes is making my mouth water! They were absolutely delicious and well worth the effort.
Asparagus
We absolutely adore asparagus! It is an incredibly versatile vegetable. It is great and easy to make, baked, grilled, or steamed to perfection. One of our favorite ways to enjoy it is grilled and tossed in goat cheese. However, we've discovered a new recipe that takes it to the next level! This is how to make the world's best low-calorie, amazing, and mouth-watering asparagus.
Did you know that you can eat asparagus with your fingers? We learned this one night while having dinner at my in-laws'. My mother-in-law’s was a stickler for proper table manners. Amy is always looking to make people laugh. So, this particular night, she picked up her asparagus and was enjoying it. After some serious side-eye, she was informed this wasn’t proper etiquette. Amy knew that differently She had done her research ahead of time, always trying to make people laugh, and in a funny discussion, she informed everyone that according to Emily Post's Book of Etiquette. that it is perfectly acceptable to eat asparagus with your fingers as long as it doesn’t have sauce. From then on, everyone got to eat asparagus with their fingers. We were all proud of Amy for making everyone laugh and for actually reading something!!!
How to make this asparagus
To prepare asparagus for cooking, start by snapping off the woody and dry ends. To do this, gently bend the asparagus spear, and it will naturally snap where the woody part ends. I never use a knife to cut asparagus. Have you noticed the amount of asparagus that usually needs to be snapped off? I usually joke with Amy that I'll snap it off at the grocery store and not pay for the extra asparagus. Of course, I never actually do that!
Using the same pan/foil the garlic is roasted on, add the cleaned asparagus. Next, toss the leftover olive oil from the roasted garlic with ½ teaspoon of it. Sprinkle ½ teaspoon of Kosher Salt on the asparagus and toss it again.
Roast in oven at 375 for 12 minutes.
There was only 1 Tablespoon of Olive Oil used on the roasted Garlic.
This Asparagus was so good, we made it a second night. The roasted garlic was what gave it a great flavor.
Enjoy
