We love Grilled Chicken, grilled Caesar salad, and grilled pizza so why not make a grilled chicken Caesar salad pizza???? We may or may not have had a couple of glasses of wine when we came up with this idea 😆. I know it sounds strange but don't you love to have garlic knots with your Chicken Caesar Salad? So, why not put all those perfect flavors together?? Well, that's what we did! Oh, and we did it all on the grill. Now, how do we make a Grilled Chicken Caesar Salad Pizza??
Grilling pizza
We know a lot of people are intimidated by the grill. Especially a charcoal grill. A gas grill is a little easier to use especially if you have a gas oven. It's kind of like cooking in the house except you're outside. The best part of cooking outside is enjoying the nice summer weather and of course a glass of Sangria or an ice-cold beer.
The challenge with grilling on charcoal is regulating the temperature. I have to say the other day we grilled a pizza and the temperature on the grill was 450 degrees. Today I couldn't get the temperature past 300 degrees. But it's ok that's part of the fun of grilling. Our pizza just took a little longer to cook today.
We've learned when grilling a pizza on a charcoal grill, the coals need to be around the grill instead of directly under the pizza stone. Yes, that was a lesson learned the hard way. For the first pizza we made using the pizza stone we had the charcoal in the bins directly under the stone. The crust cooked too quickly (well if you call the crust completely black as cooking too quickly Haha). After that, we haven't had an issue grilling pizza. See the picture below on how we spread the charcoal to create indirect heat for the pizza.
Grilled Chicken Caesar Salad Pizza
The steps for this pizza are very simple. We used Roasted Garlic and olive oil for the sauce but if you don't have roasted garlic sliced garlic can be substituted. I have to say, if you don't have roasted garlic in your house you're missing out on a great addition for so many dishes. It's softer than raw garlic and a little sweeter than sauteed. Anyway, we used the roasted garlic and olive oil as the sauce for the pizza.
Chicken Caesar Salad
For the salad portion of the pizza, we lightly sprayed the romaine lettuce with olive oil and placed it on the grill. Along with green onions and lemon. After the romaine lettuce was grilled we chopped it and tossed it in a light Caesar salad dressing.
Pizza Toppings
We grilled the chicken and shredded it into small pieces. Any cooked chicken can be used, roasted or rotisserie chicken, just use your favorite. You know, the same chicken you might put on a Caesar salad. 😀
After we added the chicken we put on Swiss Cheese. Yes, Swiss cheese, that's what we usually have on our Caesar salad and it melts great!
After the pizza crust was done and the cheese was melted we added the lettuce (Caesar salad) and topped with shredded Parmesan cheese.

TIPS:
- Spread the crust on parchment paper. This makes it easy to set on a hot stone and the paper will make it easy to pull off the hot stone when the pizza is done.
- Don't buy already shredded cheeses. I know it's easier but there is something strange about the shredded cheese that lasts for months when a block of cheese will last half the time. Anyway, we've done a taste test and found that the cheese in a block taste so much better than already shredded.
- Make sure to measure everything.
- A pizza stone is not needed. The crust cooks great directly on the grill grates. You just have to watch it closely.
- Thinly slice the Parmesan cheese using a box grater or a cheese slicer.

Grilled Chicken Caesar Salad Pizza
A Few Things We Use
Ingredients
Lettuce and dressing
- 1 Head Romaine Lettuce
- 4 Green Onions
- Olive Oil Spray
- 1 teaspoon Dijon Mustard
- ½ Tablespoon White wine vinegar
- ½ Tablespoon Olive Oil
- ½ Lemon
Pizza
- 1 Pizza Crust Store-bought or homemade
- 1 Head Roasted Garlic Or 5 cloves of sliced Garlic
- 2 Tablespoons Olive Oil
- 6 ½ Ounces Cooked Chicken Breast (Grilled, Baked, or Rotisserie chicken)
- 4 Ounces Swiss Cheese
- 2 Ounces Parmesan cheese
Instructions
Lettuce and Dressing
- Cut Lettuce in half (long ways). Lightly spray the lettuce with olive oil spray
- Grill the lettuce until it starts to wilt. It takes about 4 minutes. It all depends on how hot the grill is
- Place the onions and lemon half on the grill
- Mix together the dressing. (Dijon mustard, White Wine Vinegar, Olive Oil, and juice from ½ Lemon).
- Chop the lettuce and onions into bite-size pieces
- Drizzle the salad dressing over the lettuce and onions and toss to lightly coat.
Pizza
- Place the pizza stone on the grill to preheat. Takes about 20 minutes.
- Spread the dough on the parchment paper to the size of the stone
- Chop the chicken breast into bite-size pieces
- Shred the Swiss Cheese
- Slice the Parmesan cheese
- Mix together the roasted garlic and olive oil
- Spread the olive oil on the crust
- Sprinkle the chicken over the pizza crust
- Sprinkle the Swiss Cheese over the chicken
- Place the pizza dough, chicken, and cheese on top of a pizza stone. Put lid down
- Grill for 10 minutes and check to see if the pizza is ready
- Grill until the pizza dough is done and the cheese is melted
- Sprinkle the dressed lettuce on top of the pizza
- Top the pizza with the sliced Parmesan cheese
- Cut the pizza and enjoy!!!!
