Delicious Grilled Chicken Sandwich: The Best You'll Ever Eat

This grilled chicken sandwich is so good and cheesy and a great way to use leftover chicken!!! We realized that if we relied on a diet that involved receiving "special foods," it wouldn't be a sustainable approach for us in the long term. We needed to make a lifestyle change that would allow us to maintain healthy habits even while on vacation without feeling like we were still on a restrictive diet. Our focus is on savoring delicious flavors while also being mindful of calorie intake.

When we decided to focus on our lifestyle change, we were determined NOT to give up 4 things:

  1. Flavor
  2. Spice
  3. Variety
  4. Foods we love the most.

Here's a great way to utilize any leftover chicken you may have. This grilled chicken sandwich is effortless to make and boasts a ton of flavors. Remember to use high-quality bread - just because we're striving to lose weight doesn't mean we can't indulge in delicious bread. We're inspired by Oprah's example and refuse to give up good bread!

We have another version of this grilled chicken sandwich that has brie cheese and roasted tomatoes.  Balsamic glazed chicken and brie sandwich.  I mean really, any sandwich is good with a nice fresh baguette (and it's fancy since we're using French bread).  Plus, you get to use that leftover chicken while making an amazing sandwich.

Wanted:  Good Bread for a Grilled Chicken Sandwich!!!!!

The closest bakery to where we live is Panera Bread, which I absolutely love! But every time we go there to get fresh bread, they never have any available at our local store. It's almost like they should just be called "Panera" because they never seem to have the "bread" part. And if you're looking for a bagel, forget it. I never manage to get there early enough to find anything other than a whole wheat, gluten-free cranberry bagel. On the other hand, they always have coffee. . . but we like Starbucks.

Finally, good bread for our Grilled Chicken Sandwich

After searching for a while, we finally discovered that our grocery store sells partially baked baguettes, and other breads along with dinner rolls. This is great news for us because now we can enjoy sandwiches made with "homemade bread" without having to go through the trouble of baking it from scratch. To be precise, we take it out of the wrapper and finish baking it in our oven. We have found a grocery store that makes fresh bread every day. So that's now where we head when we want some crusty fresh bread. It's really good!

Fun way to use leftover grilled chicken.

This grilled chicken sandwich is made with juicy chicken breast, baby spinach, and Pepper Jack Cheese. It's a great recipe to use up any leftover chicken. You could even add grilled onions or roasted garlic to make it even more flavorful. In just a few minutes, you can have a lunch that will make everyone jealous. It's perfect for taking to work and showing off to your colleagues. Bake the baguette while you're getting ready for work, wrap it in foil when done, and take it with you. Since most offices don't have an oven, you can heat up your chicken, onion, and cheese in the microwave, place it on your sandwich, and enjoy an amazing lunch. It's also a great way to add some spice to your leftover chicken. Plus, it saves a ton of money since you don't have to go out and buy lunch!

A Few Things We Use

Ingredients

  • 6 Ounces Chicken breast Grilled or baked
  • 2 Ounces Pepper Jack Cheese
  • 4 ½ Ounces Baguette
  • 1 Tablespoon Mayonnaise Or Miracle Whip (fewer calories!)
  • Spinach Add 5 or 6 pieces of spinach or more if you desire
  • Tomatoes Add a couple of slices of tomato
  • Grilled or Saute Onion

Instructions

  • Bake Baguette or purchase Baguette. Split the baguette in half, Use a spoon to gently scoop out any excess bread from inside the bag.

  • Place the top half of the baguette on a baking sheet

  • Slice a grilled or baked chicken breast and place it on the side of the baguette with the excess bread removed.

  • Add cheese on top of the chicken. Place under broiler until cheese is melted about 3 minutes. Just keep an eye on it so the cheese doesn't burn.

  • While the cheese is melting. Add Mayonnaise or Miracle Whip to the bottom half of the baguette. Add Tomato and Spinach.

  • When Cheese is melted remove from oven.

  • Add Grilled Onion if desired

  • Place the top on the sandwich and Enjoy!!!
