Last night we wanted something easy for dinner. We love salmon for so many reasons. Usually in the summer we have grilled salmon on a cedar plank. Last night when we started prepping for dinner we had beautiful salmon but no cedar planks. Yes, we were bummed but when we finally came up with the grilled salmon and lemon dill sauce we were happy girls.
We poured a glass of wine and discussed how to cook the salmon. It wasn't an option to fix something else! We almost cooked the salmon in the house but it was 75 degrees and sunny so cooking inside was NOT an option either.
While enjoying our wine and discussing dinner we decided we needed to use the fresh herbs from our herb garden. I know we just planted the herb garden a few days ago. It has taken off and we have a great selection. The Dill is beautiful, the oregano is taking over the pot. And there was enough rosemary for dinner.
Creativity and Wine!!!!
After finishing our glass of wine we became super creative and came up with grilled salmon and lemon dill sauce. At least that's what we think! As you know we work very hard at cutting calories in order to enjoy our glasses of wine and not feel guilty. I mean by adding fresh herbs and lemons it brings out the flavors of the salmon. We had light Sour Cream and lemons so we used that as the start of our sauce. Fortunately, we had capers in the pantry and we were on our way to an amazing recipe.
While checking the pantry for ingredients we found some young potatoes and some foil grill bags. Taking fresh Oregano, cayenne pepper, and some sea salt. It was a great addition to the grilled salmon and lemon dill sauce. And it took about 5 minutes to put together and toss on the grill.
OH!!! This Sauce
We mixed together Sour Cream, Lemon Juice, Capers, Fresh Dill, Dijon mustard, Roasted Garlic, salt, and of course some cayenne pepper! With all these wonderful flavors no one will know the Sour Cream was light. I want this sauce with Grilled Chicken and other fish. It was amazing!!!
