We love to grill and try to grill year-round. But living in N.E. Ohio we have found there are a couple of months that even the die-hard grillers like us find it hard to get up the courage to go outside and grill. With Sumner coming to an end, we had to make BBQ Chicken. I think BBQ is a summer dish. Usually, when we grill in the winter we do things like smoking our Thanksgiving Turkey or having a nice steak.
So making one last summer BBQ Chicken to watch during the Ohio State Buckeyes game (Go BUCKS!!!) was a lot of fun. I'm not sure what we were thinking but we made a ton of BBQ chicken thighs and legs. Since we had so much chicken left over we decided to make a BBQ Chicken Pizza for the Browns game.
Not wanting to go to the store, we had to use what we had on hand in the pantry/refrigerator. Fortunately for us, we had a refrigerated pizza crust, some Sharp White Cheddar cheese, and, what we think was the star of the pizza, the secret ingredient . . .Ricotta cheese. Now we love BBQ sauce but I didn't want it directly on the crust. I thought that BBQ sauce might overpower everything and be all we would taste. So, mixing the Ricotta cheese into the BBQ sauce made a nice creamy mixture and softened the "Sauce" flavor a little bit.
This BBQ Chicken Pizza was so easy to make and is now one of my favorite pizzas! It's funny to me because I never think of chicken as a topping for pizza. But two of my favorite pizzas are this one and our Chicken Cordon Bleu Pizza. 🙂
Pizza in general is one of the best foods on the planet!. If I could I would have pizza several times a week. But unfortunately, my hips say NO!!! HaHa Hey! We all need to have a fun treat and not feel guilty for enjoying ourselves.
For me, I just need to be aware of what I eat on the day I'm having something like Pizza. So, for breakfast I'll eat fruit and lunch have chicken breast or fish that's a zero WW point dish. There are so many things that we can eat during the day that are both filling and satisfying but lower in calories/fat, so we can enjoy a fun time watching our favorite game or Netflix show, eat pizza, and not feel guilty later. It's all about balance. Just don't get down on yourself because you have a piece of pizza. Plan for it throughout the day, do your best, measure everything, and enjoy every bite of that slice!

BBQ Chicken Pizza
A Few Things We Use
Ingredients
- 1 Pizza Dough We used Pillsbury pizza dough
- ½ Tablespoon Olive Oil
- 1 Tablespoon Grated Parmesan Cheese
- 2 Cups BBQ Chicken Thighs
- 1 Cup Frozen Corn We used Grilled Corn
- 1 Medium Purple Onion
- 5 Ounces White Sharp Cheddar Cheese
- 4 Ounces Mozzarella Cheese
- 1 ¼ Cups BBQ Sauce
- 3 Tablespoon Ricotta
Instructions
- Place Olive Oil on Pizza Pan and spread the pizza dough over.Using a fork poke the crust in several places
- Sprinkle the Parmesan cheese on top of the crust
- Bake crust for 10 minutes or according to the directions on the package. Until Dough is golden
- While Crust is cooking mix together BBQ Sauce and Ricotta Cheese
- Spread BBQ Ricotta Cheese mixture on top of Pizza Crust
- Sprinkle on the White Sharp Cheddar Cheese
- Place Purple onion slices on top of the cheese
- Place Cooked BBQ Chicken on top of pizza
- Place Corn on top of the pizza
- Sprinkle Mozzarella Cheese on top. Place Pizza back in the oven for 10 to 15 more minutes. Until the cheese has melted
