With only seven simple ingredients, you'll be able to create a mouthwatering dip that will leave your guests begging for more. The key to making perfect guacamole is to start with ripe avocados, which can be identified by their slightly soft texture when you give them a gentle squeeze. It's important to avoid using avocados that are overripe as they will be brown inside and won't taste good. 

Similarly, if the avocado is too hard and doesn't give when squeezed, it's not yet ripe and can't be used. To speed up the ripening process of your avocados, place them in a paper bag with an apple and leave it for a day or so. Remember not to store your avocados in the refrigerator, as this can affect their flavor and texture. When you're ready to make your guacamole, slice open your perfectly ripe avocados and follow the easy steps in this recipe. Guacamole as a side dish or just with chips as a treat

We enjoy having guacamole with Tortilla chips, Shrimp Tacos, Fajitas, and other Mexican dishes. However, since we started our lifestyle change, we realized that we had to reduce our intake of high-fat foods and carbs. We missed tortilla chips a lot, so we tried baking corn tortillas and discovered that we prefer them to store-bought chips. They are more affordable, and we can eat more of them. Besides, they are always fresh and have a fantastic flavor.

When making the guacamole, it pays to keep the ingredients fresh; for example, don't use "plastic limes."   Put your Avocados in a bowl and cut them into chunks with a fork and table knife.   You want to leave texture and have a chunky dip, not completely smooth.  Please, never put mayonnaise in your Guacamole.  Mayo is totally not necessary, only adds extra calories, and really won't help you win the “Guac-off"!!!!

Ingredients

  • 2 Avocados
  • ½ Onion (Small Onion- We like Purple onion)
  • 2 Tablespoons Lime Juice
  • ½ Cup Tomatoes (Chopped. We use Cherry Tomatoes)
  • 1 Jalapeño (Add 2 if you want it super spicy)
  • 2 cloves Garlic (Minced)
  • Salt (start with a ½ teaspoon) Taste with a chip

Instructions

  • Cut the avocado down the middle and take out the pit. Be careful removing the avocado pit, to avoid "avocado hand"!
    Scoop the avocado out of the shell and place it in a bowl. Cut into chunks using a table knife and fork. Stir in the Lime Juice
  • Add diced onion, chopped tomatoes, minced garlic, chopped jalapeño and salt.
  • Taste with a Tortilla Chip, Adjust seasonings if needed. Taste again. You can never taste this enough!!
  • Serve with Tortilla Chips If any Guacamole is left after you finish tasting. Enjoy!!!!
