Hooked on meatballs!!!!
I'm all about our healthy lifestyle! I love finding tasty low-calorie choices, but I have to admit I struggle with snacking. I just can't resist meatballs and other finger foods, especially at parties!
Sometimes it's hard for me to resist indulging in too much food, especially when I'm around the appetizers. To prevent myself from over-snacking, I've found it helpful to stay away from the appetizer table.
Double-dipping
I went to a networking event in Maine and something that always gets on my nerves happened - double-dipping!
At the event, the food was so good that I couldn't resist going back for more. Despite being an extrovert who enjoys meeting new people, I found myself drawn to the meatballs and sauce. When I saw Amy chatting with others near the appetizer table, I went over to join them.
At the same time as the meatball went into my mouth, Amy said, "DON'T EAT THE SAUCE!" (the one I just dipped in). Then pointed out why. . . this gentleman she was talking to dipped a meatball in the sauce and bit it in half. Then he dipped it back into the sauce...AND Repeated OVER AND OVER...dunk...bite...dunk!!!!. I mean, these meatballs were not that big!!!! Really you had to double dip?!?!?!?
Amy and I giggled so hard all the way home, and we still laugh about "Sir Dips-Alot!".
Meatballs for a party or just a snack
Afterward, we were prepared to craft our own savory meatballs and experimented with various flavorings. Additionally, we wanted meatballs with their own sauce, or at least everyone gets individual bowls of sauce!!!!
Making meatballs with ground turkey or chicken is so easy and fun! Plus, it's a healthier choice. You don't need to worry about making them perfectly round; just make sure they're full of flavor and juicy.
Trick!
One of our go-to techniques for crafting juicy turkey meatballs is incorporating spinach and gooey mozzarella cheese into the mix. Not only do these flavorful additions enhance the overall taste and texture, but they also keep the turkey meat juicy. If you have kids, this is a great way to get them to eat spinach; it's a kid-friendly meal option sure to please even the pickiest of eaters.
Also, this is a great snack or appetizer for a party. The next time we make this recipe, we will add them to Spaghetti with tomato sauce, so stay tuned.

Only seven ingredients are needed for this recipe. The key is spinach. (An 8th optional ingredient is roasted garlic.)

A Few Things We Use
Ingredients
- 1 Pound Ground Turkey 99% fat-free
- 6 ounces Frozen Spinach
- ¼ cup Parmesan cheese
- 1 teaspoon Oregano
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- ½ teaspoon Black Pepper
- 1 teaspoon Salt
- 3 ½ ounces Mozzarella cheese
Instructions
- Preheat oven to 375 degrees
- In a pan, cook the frozen spinach. Let cool.
- In a large bowl, mix together turkey, spinach, parmesan cheese, oregano, onion powder, garlic powder, black pepper, and salt.
- Make meatballs about the size of a walnut. The meatballs should be sticky.
- Add a mozzarella knot (or small chunk of mozzarella cheese) to the center of each meatball and seal the meatball around it.
- Place meatballs on a foil-lined baking sheet
- Place meatballs in the oven and bake for 30 minutes or until turkey is completely done. Larger meatballs will take longer to cook.
- Serve or freeze
