We have many reasons to love the first Saturday in May. The main reason is that we started a tradition of grilling steak fajitas on Kentucky Derby Day several years ago. We love horses, dogs, drinks, and, of course, spicy food. So, the first Saturday in May is a great day for us. We spend time playing with our dogs, enjoying fajitas, drinking some margaritas and a few mint juleps, and then we watch the Kentucky Derby on TV. And this is how we roll on Derby Day!!!!
Oh, it's also the Stanley Cup playoffs, so it's usually a perfect day.
Juicy Grilled Steak Fajitas
Amy made her way out to the garden to get mint for her Mint Juleps (it is Derby Day after all!!!) We did have Margaritas and Mint Juleps so it was still a successful derby day (at least I remember it as a fun day). Tequila does make me laugh (A LOT) and one Margarita usually leads to Two, Three. . . And the next day isn't as enjoyable!!!! I mean it was Cinco de Mayo and I didn't want the Tequila to spoil. Also, I'm not sure what happened to all of our Mint in the garden, and Amy still doesn't want to talk about, or even mention, the word Bourbon... Yep, it was a VERY successful Derby Day!
Lazy Sunday
It was a beautiful day on Sunday. So guess what we made... the Fajitas!!!! They were delicious!! I was so glad we cut the grass on Friday so we didn't have to spend our normal 3 hours cutting grass on the weekend. It gave us the opportunity to have a lazy relaxing Sunday. Plus, my head really didn't want to hear the lawnmower (did I mention I might have had a few Margaritas!).
Extra Special Grilled Steak Fajitas
Now to the Fajitas! This Grilled Steak Fajita recipe is so simple and over the years we have tweaked it and believe it is perfection!!!! Also, if you don't like Steak just use Chicken Breast and don't marinate as long. What makes these Fajitas so great is the marinade. Lime Juice, Tequila (goes well with the Margaritas!), Garlic and Cilantro.
Coarsely chop the cilantro and Garlic and mix with the lime juice and Tequila. Marinate the Flank Steak for 30 minutes to 2 hours NO MORE than 4 hours. One year, we started marinating the steak early in the morning. HUGE Mistake!!!! The Lime Juice and Tequila started to cook the steak. So if you use this recipe with Chicken, only marinade the chicken for 30 minutes to one hour.
The flavors from this marinade are amazing! Everything combines together to make the steak Tangy, and garlicky, with a slight hint of cilantro and spice.
Key to GREAT Fajitas
The key to making these Fajitas super great... Make sure you buy a good Flour Tortilla. Make homemade Guacamole and Pico de Gallo.
Then add your favorite cheese (we use a mixture of Monterey Jack and Colby) and then add sour cream, if you want. It's very simple and OH... SO GOOD!!!
Make sure you buy a bag of corn chips and make double Guacamole and Pico de Gallo. These are great to snack on while the steak is cooking. Oh, and this won't break your diet unless you eat too many chips OR if you're like me and have way tooooooo many Margaritas!!! This is a "cheat weekend" for us!!!!

Fajitas
Ingredients
- 1 Pound Flank Steak (Skirt Steak) Or use Chicken Breast
- 3 Limes About ½ Cup
- ¼ Cup Tequila
- 6 Cloves Garlic
- ½ Cup Cilantro
- 1 teaspoon Salt
- 2 Serrano peppers Optional
Instructions
- Coarsely Chop the Cilantro
- Chop or Crush the garlic and slice the optional serrano peppers for added spice.
- Cut the steak into 3 pieces for marinating. After grilling, slice it.
- Mix ¼ cup of tequila, ½ cup of lime juice, some cilantro, garlic, and a teaspoon of salt together. After that, put the marinade into a zip-lock bag or a flat dish. Add the steak and keep it in the fridge for 30 minutes to 2 hours. Remember not to keep it for more than 4 hours.
- While the Steak is marinating, make the Guacamole. It takes about 5 minutes.
- While the Steak is marinating, make the Pico de Gallo.
- Grill the steak to your preferred temperature, we recommend medium. Remember the steak will continue to cook some after you remove it from the grill
- Slice the meat to the preferred thickness, cutting against the grain. NOTE: Don't worry if it isn't cut along the grain. It's so good slicing doesn't matter!
- Serve on Flour Tortillas. The way we build our fajitas is steak, guacamole, pico de gallo, cheese, and sometimes sour cream. Enjoy!!!!
