It's no secret that we looooovvvvveeee to grill! It's so much fun! Most of our dinners in Summer and Fall have some part that's made on the grill. The other day we grilled chicken and a cauliflower steak. We love a good lemon Chicken and, in the past, we would usually sprinkle on some lemon pepper and bake the chicken breast. This was good but I always felt like it had an imitation flavor. A few months ago we wanted lemon chicken and didn't have any lemon pepper in the house, so we cut up some lemons in thick slices and seared them on both sides, then just baked the lemons with the chicken.
This Lemon Chicken Breast recipe is so easy and works both on the grill or in the oven. What I like the most is how the lemon seems to have so much more juice. This give the chicken layers of flavor and, bonus, it's a healthy choice.
So many recipes for lemon chicken just add salt and lemon pepper and a ton of butter or olive oil. The chicken comes out bland and full of calories. With this lemon chicken, you're using fresh lemons and only 1 Tablespoon of Olive Oil! This discovery, for me, was life-changing!!! Well, maybe not "life-changing" but it sure did make my tastebuds happy! 😆
Lemon Chicken Recipe
As I mentioned, this Lemon Chicken is great on the grill or baked. The grilled version gives a smokey lemony flavor and the baked version is extra juicy with a touch of tartness. Either way, it's prepared the chicken is a juicy masterpiece of flavor. It's easy to make and turns out to be a very impressive dinner. Oh, and don't forget to make extra to use the leftovers for a pesto pizza or a great lunchtime sandwich.
Grilling the Lemon Chicken
First, the lemons should be chard on each side. It only takes about 20 to 30 seconds per side depending on the heat of the grill. After the lemon is chard put it to the cooler side of the grill. Then sear the chicken breast on both sides. Place each chicken breast on top of a couple of lemons on the indirect heat side of the grill. Place lemon slices on top of the chicken. Finally, put the cover on the grill and cook the chicken for about 15 to 20 minutes or until the internal temperature of the chicken is at 165 degrees.
Cooktop/Oven Version
For the cooktop version, the chicken will have a nice sear that takes about 3 minutes per side. Then pop it in the oven to finish cooking and to get the juiciest, most flavorful chicken! The lemons will have a perfect flavor. It's amazing how much juice comes from these lemons.
Lemon Chicken
Ingredients
- 2 Chicken Breasts
- 2 Lemons
- 1 Tablespoon Adobo Seasoning
- 1 teaspoon Roasted Garlic Powder
- 1 Tablespoon Olive Oil
Instructions
- Cut Lemon into thick slices (½ inch thick)
- Mix together the Adobo seasoning and Roasted Garlic PowderSeason the Chicken breast with the adobo/garlic powder mix
Grilled Version
- Place Lemons on the grill directly over the heat. Grill for about 30 seconds to one minute per side, until the lemons have a nice char. Move the lemons off the direct heat to the indirect heat side of the grill
- Place the chicken breast on the grill directly over the fire. Grill for about 3 minutes per side to get a nice char on the chicken.
- After both sides of the chicken have nice grill marks. Move them off the direct heat. Place each chicken breast on top of a lemon slice and place a couple of lemon slices on top of the chicken (basically, sandwich the chicken with the lemon slices.). Put the grill lid down and cook until the internal chicken temperature is at least 165°, about 15 to 20 minutes depending on how hot your grill is.
- Serve and Enjoy!!!
Cooktop Version
- Preheat oven to 375°Place the lemons and chicken in a hot oven safe saute pan. Saute the lemons on both sides. Just long enough for the lemons to start to caramelize, about 30 seconds to one minute. At the same time, and in the same pan, cook the chicken on both sides for about 2 to 3 minutes. Just long enough to get a nice color on the chicken breast. Then place half of the lemon slices under the chicken.
- Place the rest of the lemons on top of the chicken and place the pan in the preheated oven. Cook until the internal temperature of the chicken reaches at least 165 degrees, about 15 to 20 minutes.
- Serve and Enjoy!!!!!
