Ingredients
2Chicken Breasts
2Lemons
1TablespoonAdobo Seasoning
1teaspoonRoasted Garlic Powder
1TablespoonOlive Oil
Instructions
Cut Lemon into thick slices (½ inch thick)
Mix together the Adobo seasoning and Roasted Garlic PowderSeason the Chicken breast with the adobo/garlic powder mix
Grilled Version
Place Lemons on the grill directly over the heat. Grill for about 30 seconds to one minute per side, until the lemons have a nice char. Move the lemons off the direct heat to the indirect heat side of the grill
Place the chicken breast on the grill directly over the fire. Grill for about 3 minutes per side to get a nice char on the chicken.
After both sides of the chicken have nice grill marks. Move them off the direct heat. Place each chicken breast on top of a lemon slice and place a couple of lemon slices on top of the chicken (basically, sandwich the chicken with the lemon slices.). Put the grill lid down and cook until the internal chicken temperature is at least 165°, about 15 to 20 minutes depending on how hot your grill is.

Cooktop Version
Preheat oven to 375°Place the lemons and chicken in a hot oven safe saute pan. Saute the lemons on both sides. Just long enough for the lemons to start to caramelize, about 30 seconds to one minute. At the same time, and in the same pan, cook the chicken on both sides for about 2 to 3 minutes. Just long enough to get a nice color on the chicken breast. Then place half of the lemon slices under the chicken.
Place the rest of the lemons on top of the chicken and place the pan in the preheated oven. Cook until the internal temperature of the chicken reaches at least 165 degrees, about 15 to 20 minutes.
