Taco Tuesday
Last Taco Tuesday, we decided to switch things up and try two new types of tacos - our Grilled Shrimp Tacos and a new version with chicken instead of shrimp, Lime Tequila Chicken Tacos. We already loved the Grilled Shrimp Tacos, but the Lime Tequila Chicken Tacos were a delightful experiment. We were thrilled with how they turned out! They were bursting with flavor and had just the right amount of tanginess, spicy kick, and juiciness.
The chicken strips marinate in lime, tequila, garlic, serrano peppers, and cilantro for before grilling to perfection. The Serrano peppers add a nice, spicy zing to the chicken tacos. However, if you prefer a milder flavor, you can leave the peppers out. The grilled chicken strips are so delicious that they could be served on their own without any toppings. Also, I just wanted to share that we whipped up a delicious homemade salsa for our tacos. It was super easy to make and added a whole new level of flavor to our meal.
Overall, this was a fantastic dinner that we thoroughly enjoyed. We loved the combination of flavors and textures in both tacos, and we cannot wait to make them again!
Lime Tequila Chicken Tacos
The Lime Tequila Chicken Tacos recipe is easy to follow. Here's a tip: marinate the chicken for no more than 45 minutes to one hour. If you marinate it for longer, the lime and tequila will begin to cook the chicken.
We had so much fun cooking today! We started by marinating the chicken in a delicious lime, tequila, cilantro, garlic, and salt mixture. While it soaked up all those amazing flavors, we fired up the grill and made some Pico de Gallo and Guacamole. And, of course, we had to make Margaritas to sip on while we cooked! The best part was that the Salsa and Guacamole came together quickly, so we had plenty of time to relax and enjoy our tasty Margaritas. And the best part? The chicken tacos are low in calories, so we didn't have to feel guilty about indulging a little!
Chicken Tacos Recipe Tips:
- Use extra thin corn tortillas for the chicken tacos, not fried taco shells.
- No additional oil is required for the marinade as it is already full of flavor and does not require any extra fat.
- To add flavor without adding extra calories, load up on low-calorie toppings such as radish, fresh salsa, guacamole, lettuce, and tomatoes, making you feel like you aren't missing out on anything.

- ¼ Cup Fresh Lime Juice
- ¼ Cup Tequila
- 2 Cloves Garlic Chopped
- ½ Cup Cilantro Coarsely Chopped
- 1 teaspoon Salt
- 2 or 3 Serranos Chopped. Serranos are optional; only add it if you want it spicy!
Instructions
- Mix together the marinade. Combine the lime juice, tequila, garlic, cilantro, salt, and serranos.
- Place chicken strips in a bowl or zip-lock bag. Pour marinade over chicken strips. Cover and marinate in the refrigerator for 30 to 45 minutes. Do not marinate longer than one hour!
- To cook chicken via grilling, start by placing the chicken strips on a hot grill and searing all sides over high heat. Once done, move the chicken to indirect heat and cook it thoroughly. You can use a meat thermometer to ensure that the internal temperature of the chicken is over 165 degrees. Alternatively, you can place the chicken strips on a baking sheet and bake them in an oven preheated to 375 degrees for 15-20 minutes until fully cooked with an internal temperature over 165 degrees.
- Serve with Pic De Gallo and your favorite toppings.
