We enjoy finding easy and healthy ways to make Mexican food. Our favorite go-to dish is tostadas with cheesy chicken, turkey, or just cheese. We have discovered that baking corn tortillas is easier, less messy, and most importantly, less calorie and low fat, making them a delicious, crunchy, and healthy alternative to fried tostadas.
We usually buy the "extra thin" corn tortillas from the grocery store, as they cook faster and crisp up better than regular corn tortillas. Although we love to make homemade corn tortillas using the tortilla press, it can be time-consuming. We always measure the amount of chicken and cheese that goes on each tostada to keep them as low-fat as possible. This ensures that you get a cheesy chicken tostada without too much fat.
Homemade Baked Tostadas
Baked tostadas with chicken or turkey toppings are a great low-fat option!
Imagine a quick, delicious meal that is easy to make and tastes absolutely divine. Baked tostadas with succulent chicken or turkey is one of my go-to meals when I'm short on time. The best part? You can whip up this low-fat snack using leftover chicken or turkey and cheese. It's a perfect snack for kids to enjoy when they come home from school.
One thing to keep in mind is to measure the amount of chicken and cheese you put on the tostadas. I cannot stress enough how important this is. We've found that measuring doesn't affect the flavor in any way. It's surprising how just an extra ½ tablespoon of cheese can add extra calories without really adding much flavor. As much as I love a ton of cheese, I don't like the way I feel after eating a high-fat meal. So, go ahead and give this baked tostada recipe a try. You won't regret it!
If you have any leftover turkey from Thanksgiving, why not make an easy and delicious treat for your family? Bake some corn tortillas, chop up the turkey, and add shredded cheese. Baked Tostada Shell
To make the tostada shells, you only need a cookie sheet, some corn tortillas, and a little bit of salt. You don't need to use any oil! Just bake the corn tortillas in a preheated oven at 400 degrees for about 8 minutes. Check the tortillas after 8 minutes, and if they're not crispy, put them back in the oven and check every couple of minutes until they turn crispy.
Now it's time for the TOPPINGS: Chicken or Turkey, Cheese, Salsa, Jalapenos... You name it!
Add chopped chicken or turkey. This is a great way to use leftover chicken or holiday turkey.
Shred cheese. We like to use Monterey Jack and Sharp Cheddar or Colby cheese. To make it even easier, you can use the 4-cheese Mexican cheese mix. They are all so yummy!
Cheesy Chicken Tostadas
Top the Tostada shells with the chicken and cheese and place back in the oven for about 5 minutes or until the cheese melts (hello, cheesy chicken gooeyness!!!!).
Remember to measure the amount of chicken and cheese carefully. A quick tip is to weigh everything while the tostada shells are baking so that you can quickly assemble the tostadas when the shells are done. Typically, we put ½ ounce of chicken or turkey and one tablespoon of cheese on each tostada. These cheesy chicken tostadas are not only delicious but also low in fat.

We usually serve these tostadas with a side of salsa, making it a quick meal that will fill you up and satisfy your Mexican food cravings without feeling guilty. TIP: to enhance the flavor of store-bought salsa, add fresh chopped cilantro and/or jalapeno peppers and mix them into the salsa before serving, and you will impress your family and friends.

Baked Tostadas with Chicken, Turkey, and/or Cheese

Ingredients
- 6 Ounces Chicken or Turkey
- 4 Corn Tortillas
- 4 Tablespoons Monterey Jack Cheese or Cheddar Use your favorite cheese.
- 1 teaspoon Salt
Instructions
- Preheat the oven to 400 degrees. Place corn tortillas on a baking sheet and sprinkle about 1 teaspoon of salt on them. Use more or less salt as per your preference. Bake the tortillas for 8 minutes and check if they are crispy. If not, flip them and bake for an additional 2 minutes. Keep checking until the chips turn crispy.
- Once the tortillas have been baked, place 1 ½ ounces of chicken and a tablespoon of cheese on each tostada. Bake for approximately 5 minutes until the cheese has melted. Just before serving, you can add sliced jalapeños and spring onions to enhance the flavor.
- Serve with your favorite salsa. Enjoy it with your best friend.
