I understand that it might seem strange to have soup in the middle of summer, but this spicy grilled corn soup is actually delicious any time of year. It's even more enjoyable in the summer when you can use fresh corn off the cob. Additionally, having soup during the summer can be a fun experience, especially when dealing with a summer cold. Currently, allergies are taking a toll on us, with the air quality being exceptionally bad. We are also preparing for a big move, which we are very excited about!

Making the broth for Corn Soup!!!!
Making our own broth was quite simple and satisfying. We used the cobs of corn to create a broth that had an intense and rich flavor. It required a few hours of simmering the cobs, but the end result was absolutely worth the wait. Although it's not necessary to make homemade broth, we highly recommend it.
If you prefer, you can also use Chicken Broth or Vegetable Broth for the corn soup. To control the salt content, we always purchase low-sodium broths. What's more, we love making our own broth because it's free! Making Corn Cob Broth is a straightforward process, and the flavor is just amazing!
NOTE:
If you don't have fresh corn, don't worry, as you can use frozen or canned corn as well. This recipe is very flexible, and you can modify it as per your preferences. For instance, if you prefer a creamy soup, you can use a large can (2-15 ounces) of cream-style corn instead of grilled corn. Also, note that you don't necessarily need to use homemade broth for this recipe.
Making the Low Fat Spicy Grilled Corn Soup
To make Corn Soup, start by bringing the stock to a boil. In a separate bowl, mix 2 Tablespoons cornstarch with 2 tablespoons of cold water until smooth, then stir it into the stock until it boils and begins to thicken. Add corn, soy sauce, wine, salt, and pepper to taste. We made our Corn Soup for Meatless Monday, but we love it with crab.
Finally, turn off the heat and stir in 2 teaspoons of sesame oil. Remember not to add too much sesame oil, as it can be overwhelming. Two teaspoons will provide just the right amount of flavor. Enjoy your delicious Corn Soup!!!
Building the Soup
Place the Corn Soup in a bowl. Sprinkle some Cilantro (or Parsley) and green onions on top. And if you are like us, add some hot Thai peppers for the added spice! So yummy!!!

Low Fat Corn Soup
Ingredients
- 4 Cups Broth Corn Cob Broth, Chicken Broth or Vegetable Broth
- 2 Tablespoons Cornstarch
- 4 Cups Corn Fresh, Frozen or Canned Corn
- 1 Tablespoon Light Soy Sauce
- 2 Tablespoons Dry Sherry or Wine
- 1 Teaspoon Salt
- ½ teaspoon Pepper Black or White pepper
- 2 teaspoons Sesame Oil
- 4 Spring Onions
- 1 Cup Cilantro
- 1 Tablespoon Thai Peppers Optional
Instructions
- Bring the stock to a boil. While the stock heats up, chop onions, cilantro, and peppers (if using). Set aside until the soup is ready.
- To thicken the broth, mix the cornstarch with two tablespoons of cold water and stir it into the broth. Cook for about 1 to 2 minutes.Next, add corn, soy sauce, wine, salt, and pepper. Bring the mixture to a boil.
- Take off the heat. Add the sesame oil. Stir to combine. Serve. Sprinkle top with spring onions and cilantro. If you want this spicy add those peppers.
