Low Fat Corn Soup

- 4 Cups Broth Corn Cob Broth, Chicken Broth or Vegetable Broth
- 2 Tablespoons Cornstarch
- 4 Cups Corn Fresh, Frozen or Canned Corn
- 1 Tablespoon Light Soy Sauce
- 2 Tablespoons Dry Sherry or Wine
- 1 Teaspoon Salt
- ½ teaspoon Pepper Black or White pepper
- 2 teaspoons Sesame Oil
- 4 Spring Onions
- 1 Cup Cilantro
- 1 Tablespoon Thai Peppers Optional
Bring the stock to a boil. While the stock heats up, chop onions, cilantro, and peppers (if using). Set aside until the soup is ready.
To thicken the broth, mix the cornstarch with two tablespoons of cold water and stir it into the broth. Cook for about 1 to 2 minutes.Next, add corn, soy sauce, wine, salt, and pepper. Bring the mixture to a boil. Take off the heat. Add the sesame oil. Stir to combine. Serve. Sprinkle top with spring onions and cilantro. If you want this spicy add those peppers.
