Mashed potatoes are one of our favorite foods. Creamy mashed potatoes made with Yukon golds pair perfectly with steak, pork, chicken, or a great Thanksgiving turkey. However, Amy and Josh have always been vocal about their dislike for sweet potatoes. As for me, I enjoy them baked with butter, salt, and pepper, but my kids never gave them a chance. They always pictured sweet potatoes as being candied, with marshmallows and nuts. Although I have never made that recipe in my life, and I don't think I've really even tasted candied sweet potatoes with marshmallows, I guess I should have introduced them to mashed sweet potatoes when they were younger.

We decided to make a Spicy Pork Tenderloin with this great Red bean and Serrano Pepper side dish. I asked them to humor me and just try the mashed sweet potatoes. It adds a nice, sweet flavor with the spicy pork tenderloin and spicy red beans. The entire time we were making the potatoes, they were complaining like 3-year-olds. They didn't really complain, but it's hard to describe how two grown adults who don't want to have their childhood fear of "candied sweet potatoes" have so much fun talking about how much they are going to hate this dish we were making!
The highlight of the dinner was when they took the first bite of the Mashed Sweet Potatoes. They then jokingly accused me of keeping the recipe a secret from them all their life! I am known for offering them a snack and then coming into the room eating something different (and maybe better) than what I made for them. So now they make fun of me by saying, "Mom made these sweet potatoes for herself and wouldn't let us have them" or "She just gave us regular old mashed potatoes"! Oh, they are so funny.

Ingredients
- 1 ½ Pounds Sweet Potatoes
- 1 Tablespoons Sea Salt
- 2 Tablespoons Maple Syrup
- ¼ teaspoon Ground Cinnamon
- ½ Tablespoon Olive Oil
- ½ Cup Onions
- 1 Cup Sweet Corn
- 1 teaspoon Dried Oregano Or Rosemary (1 Tablespoon fresh)
- Salt to taste
- Pepper to taste
- ⅛ teaspoon Nutmeg Optional
Instructions
- To prepare the sweet potatoes, start by peeling them and cutting them into chunks.1 ½ Pounds Sweet Potatoes
- Place potatoes in a saucepan, cover with cool water, add one tablespoon of salt, bring to a boil, and cook until the potatoes are fork-tender.1 Tablespoons Sea Salt
- Blend the boiled potatoes with maple syrup and cinnamon in a food processor. Optional add ⅛ teaspoon Nutmeg.2 Tablespoons Maple Syrup, ¼ teaspoon Ground Cinnamon
- To make smooth mashed potatoes, pulse the potatoes in a food processor until they are smooth.
- Heat olive oil in a sauté pan and sauté onions until soft and translucent. Add sweetcorn and oregano or rosemary and sauté for an additional 3 minutes.½ Tablespoon Olive Oil, ½ Cup Onions, 1 teaspoon Dried Oregano, 1 Cup Sweet Corn
- Mix sweet potatoes with sweetcorn/onion mixture. Season to taste with salt and pepper.Salt to taste, Pepper to taste
- Serve and Enjoy!!!!
