- 1 ½ Pounds Sweet Potatoes
- 1 Tablespoons Sea Salt
- 2 Tablespoons Maple Syrup
- ¼ teaspoon Ground Cinnamon
- ½ Tablespoon Olive Oil
- ½ Cup Onions
- 1 Cup Sweet Corn
- 1 teaspoon Dried Oregano Or Rosemary (1 Tablespoon fresh)
- Salt to taste
- Pepper to taste
- ⅛ teaspoon Nutmeg Optional
To prepare the sweet potatoes, start by peeling them and cutting them into chunks.
1 ½ Pounds Sweet Potatoes
Place potatoes in a saucepan, cover with cool water, add one tablespoon of salt, bring to a boil, and cook until the potatoes are fork-tender.

Blend the boiled potatoes with maple syrup and cinnamon in a food processor. Optional add ⅛ teaspoon Nutmeg.
2 Tablespoons Maple Syrup, ¼ teaspoon Ground Cinnamon
To make smooth mashed potatoes, pulse the potatoes in a food processor until they are smooth.
Heat olive oil in a sauté pan and sauté onions until soft and translucent. Add sweetcorn and oregano or rosemary and sauté for an additional 3 minutes.
½ Tablespoon Olive Oil, ½ Cup Onions, 1 teaspoon Dried Oregano, 1 Cup Sweet Corn
Mix sweet potatoes with sweetcorn/onion mixture. Season to taste with salt and pepper.
Salt to taste, Pepper to taste
