The Best Thanksgiving Side Dish: Mashed Sweet Potatoes

Ingredients

  • 1 ½ Pounds Sweet Potatoes
  • 1 Tablespoons Sea Salt
  • 2 Tablespoons Maple Syrup
  • ¼ teaspoon Ground Cinnamon
  • ½ Tablespoon Olive Oil
  • ½ Cup Onions
  • 1 Cup Sweet Corn
  • 1 teaspoon Dried Oregano Or Rosemary (1 Tablespoon fresh)
  • Salt to taste
  • Pepper to taste
  • teaspoon Nutmeg Optional

Instructions

  • To prepare the sweet potatoes, start by peeling them and cutting them into chunks.
    1 ½ Pounds Sweet Potatoes
  • Place potatoes in a saucepan, cover with cool water, add one tablespoon of salt, bring to a boil, and cook until the potatoes are fork-tender.
    1 Tablespoons Sea Salt
  • Blend the boiled potatoes with maple syrup and cinnamon in a food processor. Optional add ⅛ teaspoon Nutmeg.
    2 Tablespoons Maple Syrup, ¼ teaspoon Ground Cinnamon
  • To make smooth mashed potatoes, pulse the potatoes in a food processor until they are smooth.
  • Heat olive oil in a sauté pan and sauté onions until soft and translucent. Add sweetcorn and oregano or rosemary and sauté for an additional 3 minutes.
    ½ Tablespoon Olive Oil, ½ Cup Onions, 1 teaspoon Dried Oregano, 1 Cup Sweet Corn
  • Mix sweet potatoes with sweetcorn/onion mixture. Season to taste with salt and pepper.
    Salt to taste, Pepper to taste
  • Serve and Enjoy!!!!
