I never really remember green bean casserole growing up. To be honest, I don't think we had it (despite what my mom says!). I've heard so much about everyone else's "childhood memories" of green bean casserole, and, as an adult (thanks, Mom!), I had to try it. So, of course, we had to make a Not Your "Regular" Green Bean Casserole and add all kinds of yummy-ness to this deliciously comforting dish that everyone (except me, REALLY MOM!) knows so well!
Green Bean Casserole is a Childhood Favorite I Never Had
We Started with the Green Beans!
I'm not a huge fan of green beans. I like them, but don't really want to eat them every day! Recently, we stumbled upon some fresh green beans at the grocery store and decided to add them to our recipe for "Not Your Regular Green Bean Casserole" in place of canned beans. We were hoping that they would provide a unique texture since they would be crunchier than the canned beans. We were pleasantly surprised that they added a subtle crunch and a milder green bean flavor.
You can't have Green Bean Casserole without Cream of Mushroom Soup!
Cream of mushroom soup and French's crispy onions are staples and main ingredients in this casserole (I think....Mom???). We have been a little obsessed with mushrooms lately, specifically shiitake mushrooms. So why not add them to this recipe?
So....there's going to be cream of mushroom soup, why not pump up the mushrooms and add more sauteed shiitake mushrooms! In order to make sure the mushrooms were super delicious, we had to saute them with Thai peppers (another obsession of ours), shallots, garlic, and a little bit of sherry. We combined this mixture with the green beans. Finally, we mixed the cream of mushroom soup with milk and combined it with the beans. That was it! It was so easy! I really couldn't figure out why we didn't have this when I was a kid. (COME ON Mom!)
Crunchy Onions on Top!
So they tell me, "You can't call it a green bean casserole if it doesn't have French fried onions on top"! I guess I have to just take "their" word for it since I never had this growing up! (Is it because you don't like beans, Mom!) We mixed about ½ the can into our casserole and baked it! After about 30 minutes in the oven, we added the rest of these "fried crunchies" to the top and baked for about 15 more minutes.

This was truly a flavorful mixture of textures and creaminess all in one amazing casserole. I will never look at these beans the same way again and this is the ONLY way I'll make them. So, I just wanted to say, I was wrong AND Mom, you were right! Thanks, Mom! 🙂

Green Bean Casserole
A Few Things We Use
Ingredients
Sauteed Mushrooms
- 1 Tablespoon Olive Oil
- 8 Ounces Shiitake Mushrooms
- 1 Shallot
- 2 Cloves Garlic
- ¼ Cup Sherry
Casserole
- 1 Pound Green Beans
- ¾ Cup 1% Milk
- 10 ½ Ounces Cream of Mushroom Soup 1 Can
- 1 Cup Fried Onions
Instructions
- Slice Mushrooms
- Chop Shallot and Garlic. Snap off the ends of the Green Beans and rinse under cool water.
- Heat olive oil in a frying pan. Add shallot and garlic to the pan and saute until they are translucent.
- Add sliced mushrooms to the shallots. Sauté until mushrooms are browned and no longer firm. Add 2 Tbs of water if mushrooms stick to the pan (more if needed). Salt and pepper to taste.Add Sherry and toss the mushroom mixture, cooking until the sherry has evaporated.
- Add Green Beans to the mushroom mixture and toss to coat
- Transfer Green Beans and Mushrooms to a casserole dish
- Add half of the fried onions and stir to combine
- In a separate bowl mix together milk and a can of cream of mushroom soup. Add milk mixture to the casserole dish
- Stir to combine and coat green beans
- Bake at 375 degrees for 30 minutes. Add the rest of the fried onions to the top of the casserole and bake for an additional 15 minutes. Check to make sure the green beans are tender, if not, add 10 more minutes and check again.
- Serve and enjoy
