Green Bean Casserole

Sauteed Mushrooms
- 1 Tablespoon Olive Oil
- 8 Ounces Shiitake Mushrooms
- 1 Shallot
- 2 Cloves Garlic
- ¼ Cup Sherry
Casserole
- 1 Pound Green Beans
- ¾ Cup 1% Milk
- 10 ½ Ounces Cream of Mushroom Soup 1 Can
- 1 Cup Fried Onions
Slice Mushrooms
Chop Shallot and Garlic. Snap off the ends of the Green Beans and rinse under cool water.
Heat olive oil in a frying pan. Add shallot and garlic to the pan and saute until they are translucent.
Add sliced mushrooms to the shallots. Sauté until mushrooms are browned and no longer firm. Add 2 Tbs of water if mushrooms stick to the pan (more if needed). Salt and pepper to taste.Add Sherry and toss the mushroom mixture, cooking until the sherry has evaporated. Add Green Beans to the mushroom mixture and toss to coat
Transfer Green Beans and Mushrooms to a casserole dish
Add half of the fried onions and stir to combine
In a separate bowl mix together milk and a can of cream of mushroom soup. Add milk mixture to the casserole dish
Stir to combine and coat green beans
Bake at 375 degrees for 30 minutes. Add the rest of the fried onions to the top of the casserole and bake for an additional 15 minutes. Check to make sure the green beans are tender, if not, add 10 more minutes and check again.
