This is one of those recipes where the oven does most of the work. There is no need to cook the pasta separately or stand over the stove sautéing mushrooms.

Roast the Chicken and Mushrooms
Start by adding the olive oil to a large roasting pan and spread it around to coat the bottom of the pan.

Cut the chicken into bite size pieces.

In a small bowl, mix all of the seasonings together first. Sprinkle the seasoning mixture over the chicken and toss until every piece is evenly coated. We like mixing the seasonings together before adding them to the chicken so you get a little bit of everything on every bite!


Slice the mushrooms

Place the seasoned chicken in the roasting pan, add the fresh mushrooms, and spread everything out into an even layer.
Then pop the roasting pan into the oven.


We like roasting the chicken and mushrooms together before adding the sauce. The mushrooms start to cook down and release their juices while the chicken cooks.

A Few Things We Use
Ingredients
- 1 ½ Pounds Chicken Thighs or Chicken Breast
- 2 Tablespoons Olive Oil
- 1 Tablespoon Flour
- 1 teaspoon Garlic Powder
- 1 teaspoon Black Pepper
- 2 teaspoons Salt
- ½ Tablespoon Chicken Boullion
- 1 Pound Mushrooms Shiitake or Baby Bella
- 2 Cans Fat-Free Cream of Mushroom Soup
- 2 Cups Chicken Broth
- ⅓ Cup Sherry
- 14 ½ Ounces Protein Pasta (entire box)
Instructions
- Preheat the oven to 400 degrees. Put the Olive oil in the roasting pan.
- Mix together the flour, garlic powder, black pepper, salt, and bouillon.
- Coat the chicken with the spice mixture.
- Place the chicken in the roasting pan with the olive oil.
- Slice the Mushrooms and place in the pan with the chicken.
- Place the roasting pan with the seasoned chicken and mushrooms in the oven. Bake for 30 minutes.
- Stir the pasta into the pan with the chicken and mushrooms.
- In a large bowl mix together the Cream of Mushroom Soup, Chicken Broth, and a ⅓ cup of sherry.
- Pour the mushroom sauce over the cooked chicken. Stir to combine.
- Place the roasting pan with the chicken, mushrooms, and pasta back in the oven. Bake for an additional 35 minutes.
- Stir after about 20 minutes, then continue baking for the remaining 35 minutes.
- Serve and ENJOY!!!!
