This One Pan Creamy Chicken & Mushroom Pasta has tender chicken, loads of fresh mushrooms, and protein pasta baked together in a rich, creamy mushroom sauce. It's hearty, cozy, and one of those dinners that tastes like it should have taken a whole lot more work than it actually did to make.

And the best part... everything is made in ONE pan! The chicken and mushrooms roast together first, then the pasta and creamy sauce go right into the same pan to finish baking. No separate pot to boil the pasta. No skillet to sauté the mushrooms. And most importantly, a whole lot fewer dishes to wash!

It's also one of those creamy comfort food dinners that is surprisingly lighter than you'd expect. We get 7 servings at about 331 calories and 31 grams of protein per serving.

This recipe was SO GOOD the next day! The pasta soaked up even more of that creamy mushroom sauce, and all those flavors had a little extra time to come together. Honestly... we might have liked it even more the second day. 😋

We reheated the leftovers right in the oven for about 20 minutes, and they were delicious. And let's face it... dinner on day two is even easier! No prep, no cooking, and hardly anything to clean. Just heat it up and dinner is ready! 🙌

So if you're cooking for two like we are, don't worry about making 7 servings. Those leftovers definitely won't go to waste!

How Easy Is It to Make One Pan Creamy Chicken & Mushroom Pasta?

VERY EASY!

This is one of those recipes where the oven does most of the work. There is no need to cook the pasta separately or stand over the stove sautéing mushrooms.

Roast the Chicken and Mushrooms

Start by adding the olive oil to a large roasting pan and spread it around to coat the bottom of the pan.

Cut the chicken into bite size pieces.

Cut up Chicken

In a small bowl, mix all of the seasonings together first. Sprinkle the seasoning mixture over the chicken and toss until every piece is evenly coated. We like mixing the seasonings together before adding them to the chicken so you get a little bit of everything on every bite!

Slice the mushrooms

Place the seasoned chicken in the roasting pan, add the fresh mushrooms, and spread everything out into an even layer.

Then pop the roasting pan into the oven.

We like roasting the chicken and mushrooms together before adding the sauce. The mushrooms start to cook down and release their juices while the chicken cooks.

And if you see some delicious-looking juices in the bottom of the roasting pan, don't drain them! That's flavor, and it's going right into our creamy sauce.

Add the Protein Pasta

Here's where this recipe gets really easy.

Add the uncooked protein pasta directly to the roasting pan.

There's no separate pot of boiling water and no pasta pot to wash later. The pasta cooks right in the sauce and soaks up all that chicken and mushroom flavor while it bakes.

Add the Creamy Mushroom Sauce

Mix together the cream of mushroom soup, chicken broth, and sherry.

Pour the sauce right over the chicken, mushrooms, and pasta.

Bake

Give everything a really good stir. You want the pasta coated in the sauce and mostly covered with liquid so it cooks evenly.

Place the roasting pan with the chicken, mushrooms, pasta, and sauce back in the oven. Bake for an additional 35 minutes

About halfway through, give everything a stir during baking to make sure the pasta is cooking evenly.

Tips for the Best One Pan Creamy Chicken & Mushroom Pasta

Don't Cook the Pasta First

The pasta goes into the roasting pan dry. It cooks directly in the creamy mushroom sauce and absorbs all that great flavor as it cooks.

Different Protein Pastas May Cook Differently

We use protein pasta, but cooking times can vary a little between brands and pasta shapes. Check the pasta toward the end of the cooking time.

Use FAT-FREE cream of mushroom soup

Cream of mushroom soup, chicken broth, and chicken bouillon all contain salt. Taste the finished dish before reaching for the salt shaker—you may not need any more.

Why Sherry?

Don't let the sherry scare you away from this recipe!

A small amount of dry sherry adds another layer of flavor to the creamy mushroom sauce and works especially well with mushrooms. As the dish bakes, much of the alcohol cooks off while that delicious sherry flavor stays behind. It's there to make the mushroom sauce taste even better!

Honestly, you don't need much! We didn't serve anything else with ours because you've already got chicken, mushrooms, and protein pasta all in one pan. This really is a complete dinner!

Now, I usually like a green vegetable with my dinner... apparently it makes me feel like I've got my life together. 😂 So next time, I might add some broccoli, asparagus, or green beans on the side. But this time? We grabbed our bowls and called it dinner!

Ingredients

  • 1 ½ Pounds Chicken Thighs or Chicken Breast
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Flour
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Black Pepper
  • 2 teaspoons Salt
  • ½ Tablespoon Chicken Boullion
  • 1 Pound Mushrooms Shiitake or Baby Bella
  • 2 Cans Fat-Free Cream of Mushroom Soup
  • 2 Cups Chicken Broth
  • ⅓ Cup Sherry
  • 14 ½ Ounces Protein Pasta (entire box)

Instructions

  • Preheat the oven to 400 degrees. Put the Olive oil in the roasting pan.

  • Mix together the flour, garlic powder, black pepper, salt, and bouillon.

  • Coat the chicken with the spice mixture.

  • Place the chicken in the roasting pan with the olive oil.

  • Slice the Mushrooms and place in the pan with the chicken.

  • Place the roasting pan with the seasoned chicken and mushrooms in the oven. Bake for 30 minutes.

  • Stir the pasta into the pan with the chicken and mushrooms.

  • In a large bowl mix together the Cream of Mushroom Soup, Chicken Broth, and a ⅓ cup of sherry.

  • Pour the mushroom sauce over the cooked chicken. Stir to combine.

  • Place the roasting pan with the chicken, mushrooms, and pasta back in the oven. Bake for an additional 35 minutes.

  • Stir after about 20 minutes, then continue baking for the remaining 35 minutes.
