Breakfast and family memories!
We really enjoy breakfast and particularly cherish the days when we have the luxury of preparing indulgent delights, such as pancakes, biscuits and gravy, and hash brown potatoes. On most days, however, I settle for simpler options like cereal, peanut butter crackers (I justify it by the protein content of peanut butter), or just fruit. Amy is fond of poached eggs, and since they are simple to make, she has them a few times a week.
Growing Up in Ohio
When I was growing up on my family's dairy farm, my Mom always made us a huge breakfast every morning, even though she also had to help with all the chores. My Dad had a herd of almost 100 dairy cows that he milked twice a day with Milk machines that could milk three cows at a time. Back then, the machines weren't like the ones they have nowadays, so he had to move them from cow to cow by hand. Once he was done milking them, he'd pour the milk into buckets, and my Mom would carry them to the milk house. It was definitely a lot of hard work, but we all worked together to make it happen.
Back to the poached eggs...
When the chores were done, my mom would go into the house and would whip up a delicious breakfast. My favorite breakfast was a stack of pancakes, bacon with fried eggs, and Ohio maple syrup that my dad made (a story for another day). If we didn't have pancakes, we would have fried mush (we will share her recipe in another post) with fried eggs. On other days, we would have poached eggs. Yes, breakfast on the farm was a huge deal. Actually, every meal was a big deal! Despite all the hard work, my dad always managed to make things fun for us. I loved the fact that we got to participate in activities like showing horses at the fairs and attending almost every Draft horse show in Ohio and Pennsylvania. It's amazing how my parents managed to juggle everything and still make us kids happy.
Why does everyone make poaching an egg hard?
Amy really loved visiting her grandma and grandpa during the summer. And who wouldn't? They spoiled their grandkids with all sorts of treats, especially when it came to breakfast. Amy couldn't get enough of Grandma's poached eggs, which were just too good to be true. She finally figured out that Grandma added a tablespoon of butter to each yolk without breaking it. Can you believe it? It was such a simple trick, but it made all the difference. And when you paired those eggs with Grandma's homemade bread, smeared with even more butter, it was a breakfast fit for a princess.
The other day, Amy and I were watching TV, and we saw someone making a poached egg, They added vinegar to the water, which we believe is an unnecessary step. . .Why add extra steps?? As we were watching, we started to wonder- "Does that give the eggs a vinegar flavor." We also noticed they had the eggs just sitting on top of a lonely piece of sad toast. There is nothing wrong with that we always eat poached eggs with toast. We go one step further and add salt and pepper and another piece of toast on top of the eggs. It's kind of like a poached egg sandwich, in order to toast, egg, salt and pepper, toast.
Little things in life that make you smile
It occurred to me that the way we eat poached eggs at home (between two pieces of toast), I've never really seen presented in the same way on TV or at a restaurant. I started to try to figure out why we did this tradition and remembered my Dad could not stand to look at the egg yolk. He would coat the eggs with salt and pepper and then cover them with his other piece of toast. He loved them but could not stand to look at the yolks!!
It is amazing the little things that we pass down to our kids and don't even realize it's something they'll also do. Little things like covering the poached egg with a piece of toast. I love these little traditions, they remind me that our family is always with us. It's the little things from those very special people that make us who we are.

So, now you know why I have a weight issue, Hello...butter in the egg yolk! Also, we were always working, so not only did we have GREAT food, but there was a lot of food at each except supper (always at 5:00) that was usually leftovers from our larger dinner, which was always at noon. I never had body issues growing up I was always confident and knew I could do anything. Of course, I was always out with the horses and busy doing stuff, so I could eat anything and, in my head, do anything. My body issues started in my 30s, so now it's such a great feeling to be back to loving who I am. Which, at the heart of it all, is something else my Dad passed down to me. He was a great man and taught me so much. I miss him every day.
The way we do poached eggs is easy, low-calorie, and really fills you up.

Making Poached Eggs: A No Fail, Quick and Easy Recipe
Ingredients
- 2 Eggs
- 2 Slices Bread Bread or English Muffins
Instructions
- Bring a pot of water to a fast boil.
- Break eggs, one at a time (or if it is easier break the eggs into a small bowl first) and add them to the boiling water.
- Set a timer for 3 Minutes.
- After one minute swirl the water gently with a slotted spoon. Keep the water boiling gently. I remove the white foam that floats to the top as the eggs cooks.
- After 3 MINUTES (yes, 3 minutes!!!), carefully lift eggs from the water with a slotted spoon. Serve immediately, and ENJOY.
