Grilled Portobello Mushrooms
After discovering how delicious Grilled Portobello mushrooms are we really have had a lot of fun experimenting with adding several different ingredients. We made this once with a Habanero pepper. . . it was spicy!!! We laughed so hard around the second or third bite. Well, we laughed so hard we couldn't breathe and the tears started rolling down our faces. OMG, those mushrooms were spicy!!! If you have ever eaten anything super spicy you know what I am talking about. You can't talk, your nose is burning and tears are rolling down your face. We still ate them - I mean we already "paid" for them in calories, the flavor was amazing and I didn't have any sinus issues the rest of the day!
The Blue cheese Portobello mushroom is delicious!
If you like blue cheese, you will truly enjoy this mushroom. The flavors go together so well and really will take the place of a blue cheese burger with very few calories. Of course, we had to add peppers and Roasted Garlic. This time we used Serrano Peppers. If you don't like spice, just omit the peppers. It is still wonderful. We have found mixing Whipped Philadelphia Cream Cheese with blue cheese makes the cheese mixture super creamy, enhances the flavors, and cuts the calories a big time (you don't need as much blue cheese to get all of that blue cheese flavor). This is my favorite mushroom. . . well it's in the top 10 list.
We usually make two different kinds of mushrooms when grilling them. Some of our favorite Portobello Mushrooms are Pizza seasoned, Gouda Cheese, Crispy Salami, and, of course, this blue cheese mushroom. Plus, the leftover stems can be used for sautéed mushrooms or really great omelets the next morning. Portobello mushrooms are great for a party. Just like a pizza party, mushrooms can be customized for each guest and your guests do the majority of the work...BONUS!!. You'll need a "food station" with different types of cheese, tomatoes, peppers, roasted garlic, onions, and anything else you think would be good on a mushroom.
Mushrooms are perfect for a party:
- Set up an area with the mushroom toppings
- Grill the mushrooms
- Let everyone add their toppings
- Put the mushrooms back on the grill for a few minutes until the cheese melts
- Serve and enjoy
Blue Cheese Mushrooms
Ingredients
- 2 Portobello Mushrooms
- Adobo Seasoning
- 2 Ounces Blue Cheese
- 3 Cloves Roasted Garlic
- 2 Tablespoons Whipped Cream Cheese
- Olive oil spray
- 2 Serrano Peppers Optional ADD only if you want spicy
Instructions
- Remove Mushroom stems. Reserve if you want to make an omelet or something else that uses mushrooms. Mix together blue cheese, cream cheese, roasted garlic, and serrano pepper (add pepper only if you want some spice).2 Portobello Mushrooms, 2 Ounces Blue Cheese, 3 Cloves Roasted Garlic, 2 Tablespoons Whipped Cream Cheese, 2 Serrano Peppers
- Spray olive oil on mushroom caps.Olive oil spray
- Place Mushrooms face down on Grill over the hot coals. Grill for 3 to 5 minutes.Tops should be a little soft to the touch
- Flip Mushroom caps and move off direct (heat) coals. Sprinkle with adobo seasoning. Grill for 4 to 5 minutes
- Add Cheese Mixture to fill Mushroom caps. Put the serrano peppers on top (if you want to make the mushroom spicy).
- Cover the grill and cook until cheese is melted about 1 to 2 minutes
- Enjoy!!!!!
