We love a pulled pork sandwich with NC BBQ. Usually, during the summer, we have what we like to call "Pork Butt Day". This is the day we put a large pork shoulder on the grill and smoke it all day. It's great fun and the sandwiches are amazing. One of the problems with having a pulled pork sandwich is the amount of calories. So we decided to try a Pulled Chicken using chicken breast. I can not believe how much flavor and how juicy the chicken breast was.
I'm still going to want to have "Pork Butt" Day. But we might not get that big of a pork shoulder and will include chicken breast as part of the day. There is a good chance we will change the name to: Chicken Pork Butt Day"!!
Pulled Chicken
There are so many things we can make with the Pulled Chicken. Of course, the yummy Pulled Chicken Sandwich, Chicken Nachos, and Burritos, the choices are unlimited!!!
We made this pulled chicken in the oven and baked it on low for about 4 hours. I have to say I was afraid it was going to be dry. It was not in fact is had more juice than chicken breast cooked in a hot oven.
Pulled Chicken Recipe
Ingredients
Seasoning Mix
- ½ Tablespoon Paprika
- 1 Tablespoon Brown Sugar
- 1 teaspoon Black Pepper
- 1 teaspoon Salt
- 1 teaspoon Dry Mustard
- ½ Tablespoon Honey Habanero Optional
- ½ teaspoon Cayenne Pepper
- ½ teaspoon Onion Powder
- ½ teaspoon Garlic Powder
- ½ teaspoon Cumin
Chicken
- 1 ½ Pounds Chicken Breast Skinless Chicken Breast
- 3 Cups Chicken Broth
Instructions
Seasoning Mix
- Mix together seasoning mix or use your favorite seasoning
Prepare Chicken
- Put Seasoning on all sides of the Chicken Breast
- Cover Chicken and place in refrigerator for at least one hour. Best to leave it overnight.
Bake Chicken
- Place Chicken in Casserole Dish Pour the Chicken broth in to cover the chicken.
- Preheat the Oven to 275 degreesBake for 4 hours. Check after a couple of hours and add additional chicken broth if the broth has cooked away.
- The majority of the broth will cook away. Let the chicken cook for 10 minutes
- Pull the chicken apart with a fork
- Serve on Nachos, as a sandwich
- Enjoy!!!
