We had an abundance of cherry tomatoes, so we decided to make homemade cherry tomato sauce. It was delicious and took only a few minutes to prepare. For dinner, we used some of the sauce to make a grilled pizza with mozzarella cheese. It was incredibly fresh and tasted like summer. We still had several cups of sauce left, so we opted to purchase fresh ravioli instead of making it from scratch. This is how we came up with this easy ravioli recipe. After all, it's summertime, and we want to spend less time in the kitchen. On a rainy day, ravioli seemed like the perfect comfort food. We made a quick trip to the store and grabbed some ravioli and a bottle of wine.

What we did to make the Ravioli
This is a delicious and satisfying meal without spending hours in the kitchen. The Homemade Cherry Tomato Sauce is a standout component that is easy to make and takes only 10 minutes from start to finish. If you opt for fresh Ravioli, it will only take 3 to 5 minutes to cook, making it a quick and convenient meal option.
To prepare this dish, start by cooking the Homemade Cherry Tomato Sauce. Once done, toss the cooked Ravioli into the sauce and add ½ cup of pasta water. Let the sauce thicken for 3 to 4 minutes before serving.
For the perfect finishing touch, sprinkle some Parmesan cheese on top, making sure to measure it accurately to ensure a well-balanced flavor. In no time, you'll have a delicious and satisfying meal that you can enjoy with your friends and family.
Fresh Asparagus
We served this with fresh Asparagus. The way to make the Asparagus:
Wash and snap the ends off of the Asparagus.
TIP: The way to snap Asparagus- Gently bend the Asparagus it will naturally snap at the right place. Place the Asparagus on a baking sheet. Drizzle ½ Tablespoon Olive Oil on top of the Asparagus. Or lightly spray olive oil, spray on the asparagus. Sprinkle ½ tablespoon or less of sea salt on the asparagus. Bake in a preheated 375-degree oven for 10 minutes. It should be a little soft and will be perfect!!!
If you have a freezer, save the bottoms of the Asparagus. When you get a nice amount of Asparagus ends, you can boil them in Chicken Broth or Water and make really good Asparagus Soup.
Yes, you can have Ravioli on a diet!!!
This meal can fit into your diet plan as long as you keep track of how much cheese and ravioli you consume per serving. The sauce only includes 2 tablespoons of olive oil. So, although it may feel like you're indulging in a cheat meal, you're actually not.

Ravioli tossed in Homemade Tomato Sauce
A Few Things We Use
Ingredients
- 2 Tablespoons Olive Oil
- 3 Cloves Garlic
- 6 Cups Cherry Tomatoes
- ½ Tablespoon Sea Salt
- ¼ Cup Fresh Oregano or Basil
- 1 package Ravioli
Instructions
- Rinse the cherry tomatoes with cool water
- To prepare the ingredients, either chop, crush, or slice the garlic and chop the oregano or basil. Heat the olive oil until it starts to glisten, which takes about 30 seconds. Add the garlic and cook for 30 seconds to 1 minute until the garlic starts to soften.
- Add the tomatoes and salt
- Cook until the tomatoes start to get soft and burst open. About 5 minutes.
- Turn off the heat on the cooktop. Add oregano or basil. Taste to make sure it has enough salt. Be careful it is HOT!!!
- Cook ravioli according to package directions
- Gently toss the ravioli into the tomato sauce.
- Sprinkle with cheese and Enjoy!!!!
