We are thrilled about our Patio Garden and the amazing fresh tomatoes it has produced! They have been enjoyed in every meal of the day, from having them with bacon for breakfast to making tasty tomato sandwiches with jalapeños for lunch. We still have plenty of fresh tomatoes left, so we decided to get creative and whip up a cherry tomato pasta dish. It may sound a bit unusual, but the sweet and juicy flavor of the cherry tomatoes pairs perfectly with the angel hair pasta, making for a truly scrumptious dinner. We even created a recipe called "Garden to Table Summer Pasta with Fresh Tomatoes & Basil," which turned out great.
Garden to Table!!!!
The pasta we had was absolutely delicious, so we wanted to make it again. Unfortunately, we didn't have all the necessary ingredients and had planned to go to the grocery store. However, we couldn't leave without our four furry Pups, who love going for rides. Before we could leave, the boys found something gross in the yard and rolled around in it. Soooooo, giving them a bath became a priority over the grocery trip. Bathing four large dogs is no easy task, but we managed to get it done. Since our plans changed, we decided to make the recipe using items we already had at home.
Basil, fresh cherry tomatoes, and peppers from the Garden
Yesterday, we had the remaining angel hair pasta for dinner. Although we didn't have any cheese, we made it with fresh garlic, a shallot, fresh basil, and some cherry tomatoes. It was a great combination! We even had a bottle of Rosé that we chilled in the freezer. While looking for ingredients, we found two spicy Italian sausage links in the freezer. This gave us the idea to make another delicious pasta dish, this time using garden-fresh ingredients!!!!
Fresh Tomatoes, Basel, Pasta, Spicy Italian Sausage Bliss
I love being able to step out onto my patio and grab some cherry tomatoes, basil, and spicy peppers to whip up a delicious dinner. If you don't have a garden, you can still find great cherry tomatoes at your local grocery store any time of year.
As the pasta and sausage were cooking, we prepared the rest of the ingredients. We finely chopped some basil, garlic, and shallot, which would give our dish a fragrant and flavorful boost. Heat some olive oil in a saute pan. Then add the garlic, shallot, hot peppers, and salt, cooking them for a few minutes to allow their flavors to blend together.
After that, we added the fresh cherry tomatoes and tossed them around until they became soft and started to burst. This took about five minutes and gave our dish a sweet and tangy flavor.
We then added the cooked sausage and pasta, mixing everything together. To bring everything together, we poured in the saved pasta water and mixed it in. Finally, we topped the dish with the fragrant basil, giving our dish an extra pop of flavor.
With all these delicious flavors coming together, our dinner was ready to be served in just a few minutes!
