Ingredients

  • 8 Ounces Angel Hair Pasta
  • 1 Tablespoon Olive Oil
  • 1 Cup of Reserved Pasta Water
  • 2 Cloves Garlic
  • 1 Small Shallot
  • 6 Ounces Spicy Italian Sausage Sweet or regular works
  • 4 Cups Cherry Tomatoes
  • 3 Tablespoons Fresh Basil
  • 1 teaspoon Sea Salt
  • 2 Serrano Pepper Optional

Instructions

  • Cooking pasta is an easy process. Begin by boiling a large pot of water and add a couple of tablespoons of salt once it starts boiling. Then, add the pasta to the boiling water and cook it as per the instructions mentioned on the package.
Please note that the pasta will continue to cook when mixed with the tomato mixture, so cook it for 30 seconds to a minute less than the package directions. Once the pasta is cooked, make sure to reserve 1 cup of the pasta water.

  • Thoroughly cook chopped Italian sausage in a sauté pan. Set aside.
    1 Tablespoon Olive Oil
  • Heat the olive oil in a saute pan. Add the garlic, shallots, and peppers (peppers are optional). Cook for about a minute until the garlic and shallots begin to soften.
2 Cloves Garlic, 1 Small Shallot, 2 Serrano Pepper
  • Add the whole cherry tomatoes to the garlic and shallot mixture. Saute the mixture until the tomatoes burst open, which should only take a few minutes.

  • Combine the pasta with the tomato mixture and toss thoroughly until evenly mixed. Gradually pour half of the reserved pasta water into the mixture and continue stirring. Next, add the cooked Italian Sausage and stir everything together. Add the remaining pasta water if needed for additional sauce.
Once everything is cooked, take the pan off the heat and sprinkle in the chopped basil. Toss everything together until it is properly combined.
