We have had so much fun with our Patio Garden, and we are reaching that point where we are offering produce to our neighbors. So why not make an easy summer pasta dish? Not only are fresh tomatoes great to eat right off the vine, but it's also a great excuse to have a nice plate of tomatoes with salt and pepper and a great glass of Rosé wine! We love Rosé in the summer and were so surprised at how amazing it went with tomatoes. I mean, I will never have Tomatoes without a Rosé wine. . . well not for breakfast. Brunch is up for debate!!!
Fresh Tomatoes and Basil
We've had a blast coming up with different things to do with all of these fresh tomatoes, peppers, and herbs. Since it was raining yesterday, it was too hard to grill...We decided to make pasta!
Pasta on a diet!!!
I absolutely adore a great bowl of pasta and a glass of wine! And let me tell you, Cacio e Pepe is simply divine! It's like an adult version of mac and cheese. Oasta is often thought of as a food to avoid when you're on a diet. But I can't resist it! We don't have it very often, but when we do indulge, the dish must meet the following criteria:
- It must be really good and worth the calories.
- We measure everything we eat!
- The serving size must be accounted for and written down.
I really liked this dish because it didn't feel heavy like those pasta dishes with cream sauce. It's a great option for a light summer meal. You can enjoy a big bowl of carbs without feeling bloated or heavy. It's a win-win! (Well, except for the bathing suit part. I hate them no matter what.) 🙂
Garden to Table Summer Pasta
You're not going to believe how easy this summer pasta dish is!!!!
First, boil some angel hair pasta. You can make your own, but to make this super easy, we just bought our favorite pre-packaged brand. Don't forget to add salt to the water. It took 3 minutes to boil the Pasta!
Next, heat your olive oil and add the roasted garlic, peppers (if using) and cherry tomatoes. You can leave the tomatoes whole, so there is no need to chop them!!!

A Few Things We Use
Ingredients
- 8 Ounces Angel Hair Pasta
- 1 Tablespoon Salt
- 4 Cups Cherry Tomatoes
- 1 teaspoon Salt
- 1 Tablespoon Roasted Garlic Optional- Substitute with ½ tablespoon fresh garlic chopped
- 1 Cup Basil
- 2 Ounces Mozzarella cheese
- ¼ Ounce Parmesan cheese Grated
- 8 Thai Peppers Optional (add ONLY if you like spice. . . a lot of spice!!!!)
Instructions
- Bring a large pot of water to a boil. Add 1 Tablespoon of salt, Then add the Pasta cook according to the package direcitons or to your preference. (Remember the pasta is going to cook a little more when you toss it with the tomato mixture. We like to cook the pasta about a minute less than the package recommends).8 Ounces Angel Hair Pasta, 1 Tablespoon Salt
- Heat olive oil and add garlic, whole cherry tomatoes, 1 teaspoon of salt, and peppers (if desired, note that they will add spice).4 Cups Cherry Tomatoes, 1 Tablespoon Roasted Garlic, 8 Thai Peppers
- Saute the mixture until the tomatoes begin to burst open.
- As soon as the pasta is done, reserve ½ cup of water. and drain the pasta. Than toss the pasta with the tomato mixture. Toss to the pasta and tomato mixture to combine.
- Slowly add ¼ cup of the reserved pasta water and gently stir. Add the cheese and toss to coat the pasta. Add additional reserved pasta water if needed for the sauce.2 Ounces Mozzarella cheese, ¼ Ounce Parmesan cheese
- Remove pan from heat and add chopped basil. Toss to combine1 Cup Basil
- Serve with an additional sprinkle of Parmesan cheese if desired. Enjoy!!!!
