Bring a large pot of water to a boil. Add 1 Tablespoon of salt, Then add the Pasta cook according to the package direcitons or to your preference. (Remember the pasta is going to cook a little more when you toss it with the tomato mixture. We like to cook the pasta about a minute less than the package recommends).
8 Ounces Angel Hair Pasta, 1 Tablespoon Salt
Heat olive oil and add garlic, whole cherry tomatoes, 1 teaspoon of salt, and peppers (if desired, note that they will add spice).
4 Cups Cherry Tomatoes, 1 Tablespoon Roasted Garlic, 8 Thai Peppers
Saute the mixture until the tomatoes begin to burst open.
As soon as the pasta is done, reserve ½ cup of water. and drain the pasta. Than toss the pasta with the tomato mixture. Toss to the pasta and tomato mixture to combine.
Slowly add ¼ cup of the reserved pasta water and gently stir. Add the cheese and toss to coat the pasta. Add additional reserved pasta water if needed for the sauce.
2 Ounces Mozzarella cheese, ¼ Ounce Parmesan cheese
Remove pan from heat and add chopped basil. Toss to combine
1 Cup Basil
Serve with an additional sprinkle of Parmesan cheese if desired. Enjoy!!!!
