Spicy Salad
Get ready to indulge in a delectable salad that should be on your must-try list this summer - the Spicy Potato Salad. By using a blend of light mayo and light sour cream, along with a touch of apple cider vinegar, we have transformed this salad into a healthier version without sacrificing its taste. With a perfect balance of creaminess and tanginess, it's hard to believe that you're consuming almost half the calories of a regular potato salad. The optional jalapeños give this salad an extra zing, adding a delightful crunch and a spicy twist to the potatoes and dressing. Trust me, this salad will leave your taste buds wanting for more.
Grandma's Dill Pickle Salad
If you want a traditional potato salad recipe that's still about half the calories, this recipe is perfect for you. We use dill pickles for extra tang, but you can substitute sweet pickles if you prefer. Grandma's Dill Pickle Potato Salad is an easy recipe that uses a similar technique as the Spicy Potato Salad, using light mayo and light sour cream. In this recipe, we use yellow mustard instead of vinegar and dill pickles (with some juice) to add extra brine, resulting in a completely balanced salad. For a traditional spin, top with sliced eggs and paprika. Alternatively, add cayenne pepper if you want to wake up your taste buds. Give it a try and savor the deliciousness!
Grilled Potato Salad (Recipe Below)
This grilled potato salad recipe is a lot of fun to make! Sometimes, when we're brainstorming new ideas, we throw ideas back and forth until we come up with something that sounds exciting. However, this recipe was a little different. My mother expressed her desire to grill and suggested that we come up with a grilled potato salad recipe. At first, I thought it was a bit strange, but then again, we did make a fabulous habanero banana cream pie once, which also sounded unusual at the time but turned out to be delicious.
We decided to try making a Grilled Potato Salad, which turned out to be a great idea! It was a fun time grilling, and even if the salad didn't turn out to be great, we would have still enjoyed ourselves with a few glasses of wine.
We kept the potatoes whole, tossed them in olive oil and spices, and then put them on the grill. Then, we mixed our sauce using Dijon mustard and red wine vinegar, similar to our other favorite potato salads.
The grilled potatoes had a smoky flavor that blended well with the sweetness of the mustard and the creaminess of the mayo/sour cream mixture. The result was a delicious grilled potato salad that was a total hit at our party.
One of the best things about making this salad was that we didn't have to heat up the house, and we got to spend time outside with everyone while making a killer salad. If you decide to try making any of these salads, we would love to hear about your experience.
