Prepare the Potatoes
- 12 Ounces Potatoes We used Fingerling
- 1 Tablespoons Olive Oil
- 1 teaspoon Cayenne Optional use if you want it spicy
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 1 teaspoon Thyme
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 Medium White Onion
Prepare the Sauce
- ½ Cup Light Mayonnaise
- ½ Cup Light Sour Cream Or Fat-free Sour Cream
- 1 Tablespoon Dijon Mustard
- 1 teaspoon Cayenne Optional
- 1 teaspoon Garlic Powder
- 2 teaspoon Red Wine Vinegar
Prepare the Potato Salad
- ½ White Onion Chopped
- 3 Ribs Celery Chopped
Prepare the Potatoes
Slice the onion into large chunks.
Rinse potatoes under cold water. Toss the potatoes with spices and olive oil
Place the potatoes in an aluminum foil boat or a grill-safe pan on the grill over medium-high heat. Grill the potatoes on indirect heat until they are fork-tender.
Toss the onion in the same bowl as the potatoes with the remaining olive oil and spices. Place the onion on the grill in a foil boat.
When done, remove the potatoes and the onions from the grill. Place them in a bowl and allow to cool.
Prepare the Sauce
In a small bowl, combine mayo, sour cream, mustard, spices, and red wine vinegar
Prepare the Potato Salad
Cut the potatoes into bite-size pieces. Add them with the chopped grilled onions, raw onions, and celery.
Add the Mayo/Sour cream sauce to the potatoes and toss to coat completely. Add salt and pepper to taste
