Ingredients

Prepare the Potatoes

  • 12 Ounces Potatoes We used Fingerling
  • 1 Tablespoons Olive Oil
  • 1 teaspoon Cayenne Optional use if you want it spicy
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 Medium White Onion

Prepare the Sauce

  • ½ Cup Light Mayonnaise
  • ½ Cup Light Sour Cream Or Fat-free Sour Cream
  • 1 Tablespoon Dijon Mustard
  • 1 teaspoon Cayenne Optional
  • 1 teaspoon Garlic Powder
  • 2 teaspoon Red Wine Vinegar

Prepare the Potato Salad

  • ½ White Onion Chopped
  • 3 Ribs Celery Chopped

Instructions

Prepare the Potatoes

  • Slice onion.

  • Rinse potatoes under cold water. Toss the potatoes with spices and olive oil

  • Place the potatoes in an aluminum foil boat or a grill-safe pan on the grill over medium-high heat. Grill the potatoes on indirect heat until they are fork-tender.

  • Toss the onion in the same bowl as the potatoes with the remaining olive oil and spices. Place onion on the grill

  • When done, remove the potatoes from the grill, with the onions. Place the potatoes in a bowl and allow to cool

Prepare the Sauce

  • In a small bowl, combine mayo, sour cream, mustard, spices, and red wine vinegar

  • Cut potatoes into bite-size pieces. Chop the grilled onions, raw onion, and celery. Add to the potatoes

  • Add the Mayo/Sour cream sauce to the potatoes and toss to coat completely. Add salt and pepper to taste
