I think my life has changed! Well, it has in many ways, but today, it has been changed by GARLIC!!! Roasted garlic, to be exact! I think I could eat this on anything and everything (I am almost ready to put it on cereal! It takes about an hour to roast. We've started roasting a whole garlic, using what we need, and keeping the rest "on hand" in the refrigerator. It's so good, to be honest; there is rarely much left over. I mean, sure, garlic can give you bad breath. But hey, at least that "space invader" in line at the grocery store will think twice before investigating and questioning everything in YOUR cart! Of course, I'm not convinced that roasted garlic has the same effect on breath as raw garlic.

This tip is for pizza lovers looking to save a few calories without sacrificing flavor. Try using roasted garlic as a sauce substitute! We've found that this works particularly well on 4 Cheese Pizza. It's fun to experiment with other pizzas that usually have a cheese or olive oil-based sauce. The roasted garlic is sweeter than raw or sautéed garlic and turns into a paste that's easy to spread. Give it a try, and enjoy a delicious, healthier pizza!
This does require a little time. If you're like us, you'll want to roast the garlic and move right on to creating your meal. But wait....the garlic will be HOT HOT HOT!!!!
Just add Olive Oil.
We like to add a small amount of olive oil, salt, cracked pepper, and red pepper flakes to enhance the flavor of garlic. Trimming off the top part of the garlic also enables the salt and the pepper to fully permeate the garlic's flesh. Resulting in a delicious and creamy paste consistency that can be blended with pasta or spread on bread and pizza crust. Hello, what an easy garlic bread?!?!
For some spice, add crushed red pepper on top of the garlic.
After you season the garlic, wrap it in foil and toss it in the oven for about an hour. When the garlic is done, let it cool for a few minutes. Trust me, it's well worth the wait not to scorch your fingers trying to get the garlic out of the steaming hot garlic paper.
This garlic can be used in so many recipes try it with Stuff Acorn Squash, Grilled Steak stuffed with blue cheese, garlic bread, and other dishes. It is just so good!
Ingredients
- 1 Tablespoon Olive Oil
- 1 Head of Garlic
- ½ Teaspoon Salt More/Less to taste
- ½ Teaspoon Ground Pepper More/Less to taste
- ¼ Teaspoon Crushed Red Pepper Flakes More/Less to taste
Instructions
- Cut off the top of a head of garlic
- Set the garlic on aluminum foil, large enough to wrap the garlic in the foil
- Add Olive Oil ( you can use less oil if desired)
- Season with Salt, Pepper, and Red Pepper Flakes (don't add the red pepper flakes if you don't like spice)
- Wrap in foil and bake for 1 hour at 350 degrees.
- Remove garlic from the foil and squeeze out of the garlic paper.
- A large head of garlic will be about 2 or 3 Tablespoons of roasted garlic
