We love going to the local Farmer's Markets! Lucky for us, there are several within a 20-minute drive from my home. It's always a treat to find a variety of fresh vegetables, although sometimes we need to visit more than one market to get everything on our list. We discovered Pattypan Squash, which is now one of our go-to favorites whenever we go to the market.

Pattypan Squash!!!
Have you ever given Pattypan Squash a try? They're these cute little summer squashes shaped like flying saucers with scalloped edges that make them easy to slice. Surprisingly, cooking them is a breeze, just like any other type of summer squash. If you want the best flavor, go for the smallest ones you can find.
We found Pattypan squash at a farmers market and were so excited to try it out since our garden hasn't produced any yet. I gotta tell you, the taste is really mild and buttery. You can cook it up in all sorts of ways, like roasting, grilling, sautéing, or even baking it in a casserole. And hey, if you have any recipes for summer or zucchini, you can use them with Pattypan squash, too!
An added bonus of the squash's shape is that it can be easily hollowed out and filled with delicious ingredients such as turkey, cheese, peppers, and anything else you can think of.
Making the Pattypan squash
It may seem silly, but Amy and I are really excited about cooking squash. The flavor is buttery and delicious, making it the perfect addition to a summer dinner. We also haven't been eating enough vegetables lately, so featuring pattypan squash as the star of the meal is really exciting for us!
To prepare, we slice the squash and roast it in the oven with cherry tomatoes, fresh oregano, and garlic. We use a bit of olive oil to make sure the squash cooks evenly, then toss it with creamy goat cheese for a delicious finish.
Additionally, we have created a stuffed pattypan squash that serves as a complete meal.

Roasted Herb-Garlic Patty Pan Squash
A Few Things We Use
Ingredients
- 1 ½ Pound Patty Pan Squash (can substitute with any summer squash)
- 2 Cloves Garlic
- ¼ Cup Water (or Fat-free Chicken Broth)
- 12 Ounces Cherry Tomatoes
- 2 Ounces Goat Cheese
- 2 Tablespoons Olive Oil
- 1 teaspoons Sea Salt
- ½ teaspoon Black Pepper
- 2 Tablespoons Fresh Oregano
Instructions
- Preheat your oven to 350 degrees.
- First, wash the squash thoroughly. Then, remove the top stem by cutting it off. Finally, cut the Pattypan into bite-size pieces.
- Slice the garlic into thin pieces.
- Place Patty pan squash in a casserole dish and coat it with olive oil. Then, pour ¼ cup of either water or fat-free chicken broth over the squash.
- Sprinkle the garlic, fresh oregano, salt, and pepper onto the squash.
- Put the tomatoes on top of the squash.
- To prepare, bake the dish for 45 minutes. If the squash is firm, continue cooking until you can effortlessly pierce the patty pan with a fork
- To add the finishing touch, sprinkle some goat cheese on top and serve. Enjoy your meal!

And in instructions it says cook for 45e. Should it be 45 minutes?
