- 1 ½ Pound Patty Pan Squash (can substitute with any summer squash)
- 2 Cloves Garlic
- ¼ Cup Water (or Fat-free Chicken Broth)
- 12 Ounces Cherry Tomatoes
- 2 Ounces Goat Cheese
- 2 Tablespoons Olive Oil
- 1 teaspoons Sea Salt
- ½ teaspoon Black Pepper
- 2 Tablespoons Fresh Oregano
Preheat your oven to 350 degrees.
First, wash the squash thoroughly. Then, remove the top stem by cutting it off. Finally, cut the Pattypan into bite-size pieces.
Slice the garlic into thin pieces.
Place Patty pan squash in a casserole dish and coat it with olive oil. Then, pour ¼ cup of either water or fat-free chicken broth over the squash.
Sprinkle the garlic, fresh oregano, salt, and pepper onto the squash.
Put the tomatoes on top of the squash.
To prepare, bake the dish for 45 minutes. If the squash is firm, continue cooking until you can effortlessly pierce the patty pan with a fork
To add the finishing touch, sprinkle some goat cheese on top and serve. Enjoy your meal!
