I totally understand that there are a lot of opinions about using imitation crab versus fresh crab. Many years ago, we were able to get fresh blue crab from the Chesapeake Bay and would have crab-picking parties. Dipping that fresh crab in butter . . . OMG nothing better!!! I'd never make a crab dip with that crab because it was so good. Plus, it's a lot of work to pick a pound of crab! So, using imitation crab gives a nice flavor and texture to the dip.
This dip is super quick to make and tastes like it took forever to prepare. The spicy crab artichoke dip can be made as mild or as spicy as you like, but we really enjoy the extra kick of spice. Instead of Jarlsberg cheese, you can use Swiss cheese for this recipe. And if you opt for fat-free cream cheese, you'll cut down on the calories while still getting a rich flavor.
To prepare the dish, start by roughly chopping the artichoke and shredding the cheese. Then, allow the cream cheese to reach room temperature, as this will make it easier to blend together with the crab, artichoke, and cheese.

- 8 Ounces Flake Style Crab classic
- 12 Ounces Artichoke Hearts in water
- 4 Ounces Reduced Fat Cream Cheese
- ¼ Cup Light Sour Cream
- ¼ Cup Light Mayonnaise
- ½ Cup Jarlsberg Cheese
