Sheet pan pizza is super easy to make and a blast to serve! This is the pizza recipe that solves all of your homemade pizza problems. . stone no problem!! The square pieces of pizza are so much fun to munch on. We've been whipping up sheet pan pizzas for ages. Before we got a pizza stone, using a sheet pan was the only way we could make homemade pizza. While we adore homemade pizza dough, sometimes we just don't have the time to make it or we forget to make it in time for the dough to rise. That's when store-bought pizzas come to the rescue! And hey, if you load up the pizza with awesome toppings, you won't even realize it's not homemade!!!
Pesto Chicken Sheet Pan Pizza
One of the best things about this homemade sheet pan pizza recipe is that you can personalize it with your favorite toppings. We used some pesto we had in the freezer as the sauce and then added chicken, mushrooms, red onion, NY sharp cheddar cheese, and parmesan cheese. If you haven't tried NY Sharp white cheddar cheese on a pizza, you're seriously missing out! This cheese has so much flavor and really takes the pizza to the next level. While we usually love mozzarella cheese for the fun cheese pull, for this sheet pan pizza, we opted for only NY white cheddar cheese to cut some calories by skipping the mozzarella cheese.
Making the Pizza:
For this homemade sheet pan pizza recipe, we used a refrigerator pizza from our local grocery store. Spread a light layer of olive oil on the pan. This keeps the dough from sticking to the sheet pan and it adds a butter flavor to the crust. Then sprinkle on some parmesan cheese with the olive oil. We usually sprinkle some crushed red peppers onto the pan for a little spice. But since we were using our homemade spice pesto we decided not to add the crushed red pepper flakes. Spread the dough over the cheese and olive oil. Stretch the dough and crimp the sides of the dough for the sheet pan pizza.
We used baked chicken, baby Bella mushrooms, and a purple (red) onion for the toppings. Cut the chicken into small chunks. Chop the mushrooms and slice the onion thinly
Start by sautéing the sliced mushrooms in a tablespoon of olive oil until they have a nice texture. Next, add the salt and sherry, and sauté for another couple of minutes. Set the mushrooms aside until its time to build the pizza
Building the delicious sheet pan pizza! Start by spreading the pesto evenly over the dough, then add the toppings - chicken, mushrooms, and sliced onion
Finally, sprinkle the sheet pan pizza with the finely grated parmesan cheese and then the shredded NY Sharp cheese for all the great extra flavor.
Enjoy!!!!
