Usually, when we make shrimp scampi we have it with pasta. And it is always one of my favorite dishes for a special occasion. Shrimp Scampi just seems fancy! So, when we had some flatbread sent to us we decided, "Why not take one of our favorite "fancy dishes" and make a shrimp scampi flatbread pizza"??. This is now one of my favorite pizzas. It's like having shrimp scampi and garlic bread all in one bite. Also, how can you go wrong with flatbread and shrimp in a garlic butter sauce? This pizza has all the creamy garlic yummy flavors that you want with shrimp scampi and the convenience and fun of a pizza.
Shrimp Scampi Flatbread Pizza
This was the first time we tried flatbread as a pizza and, I have to say, if you haven't tried flatbread yet I highly recommend it!! There are so many great ways to use flatbreads. It works great as a substitute for bread in a sandwich, or just with oil and garlic. My all-time favorite....flatbread as a pizza! The bread has a crunchy crust bottom and a great "bready" texture on the top. Not to mention, making the Shrimp Scampi pizza was maybe one of the easiest pizzas we ever made!
When making this pizza we didn't use as much Wine or Butter in the recipe. Which is good you can save that wine for sipping while making the pizza!!!
How to make Shrimp Scampi
This is going to blow your mind how easy it is to make. We had shrimp that was already peeled. So, we just had to pull the tails off and toss in a fun marinade. After the Shrimp is ready you just cook them in butter, wine, and garlic. Put some olive oil on the flatbread toss on the cheese and shrimp and place in the oven!. When the cheese is melted and everything is nice and bubbly it's done!! We chopped some fresh parsley and had some lemon just in case someone wanted a little more lemon flavor.
Marinade for the Shrimp
Mix together the marinade for the shrimp: garlic, salt, oil and lemon juice and zest.
Marinate the shrimp for about 15 minutes.
Sauté
Add the olive oil and butter to a saucepan. When the butter is melted add the sliced garlic and red peppers.
Add the shrimp to the garlic
Add the wine (if you really love lemon, add another splash of lemon juice) and cook the shrimp for about 3 to 4 minutes until the shrimp is done.
Prepare the Flatbread
When the shrimp are done remove from pan. Drizzle the liquid (garlic, butter, wine, and lemon juice) over the pizza. Spread out the garlic on the flatbread. Place pieces of the mozzarella on the bread.
Finish the Pizza
Add the shrimp and the parmesan cheese. Place in the oven and wait for this deliciousness to finish. While waiting for this yummy shrimp scampi flatbread pizza to finish pour another glass of wine!!!
When the pizza is done the cheese will be melted and the crust will be golden. Remove from the oven and let rest for 5 minutes or so. I know, it's so hard to wait but we found it is totally worth letting everything just settle into place. Trust me it's worth the few minutes!! Before serving, sprinkle on some fresh parsley and give everyone a lemon slice. Just in case they want a little additional zing from the lemon on their shrimp scampi flatbread pizza.

TIPS:
- Cook the Flatbread pizza according to the bread recipe for oven temperature
- If the shrimp has a "shrimpy" fishy smell check out this blog post on how to eliminate the smell. It works!!!!
- If you don't like parsley just leave it off or use Basil, Oregano or even Cilantro.
- Use Sharp Cheddar Cheese if you don't have Mozzarella Cheese in the Fridge. I would say use your favorite cheese if it tastes good with shrimp. I wouldn't use American Cheese. Haha!!!
Shrimp Scampi Flatbread Pizza
Ingredients
Marinade
- 2 Cloves Garlic
- 1 teaspoon Salt
- 2 Tablespoons Olive Oil
- Zest of one Lemon
- Juice of ½ Lemon About 1 ½ TBS.
Shrimp
- 1 Pound Shrimp
- 2 Tablespoons Butter
- 2 Tablespoons Olive Oil We like Sauvignon Blanc
- 3 to 4 Cloves Garlic Sliced or Minced
- ¼ Cup White Wine We like Sauvignon Blanc
- 1 teaspoon Salt
- 1 Tablespoon Crushed Red Pepper Flakes Optional
Flatbread
- 1 Flatbread
- 4 Ounces Mozzarella Cheese Or a Sharp Cheddar
- 1 Ounces Parmesan Cheese
Sauteing the Shrimp
Instructions
- Preheat the Oven to 425 degrees (or follow the heating instructions on the flatbread package)
Marinade
- Mix together 2 cloves chopped or minced garlic, 1 teaspoon salt, 2 Tablespoons olive oil, the juice of half a lemon, and the zest of one lemon
- Make sure to remove the shells from the shrimp and pat dry. Stir marinade into shrimp and let sit for 15 minutes.
Cook Shrimp
- Slice garlic and measure the red pepper flakes and 1 teaspoon salt
- Add olive oil and butter to sauté pan. Heat for 30 seconds
- After butter is melted add the garlic and pepper flakes to the sauté pan. Sauté for 30 seconds.
- Add the shrimp including all the marinade to the sauté pan
- Add the wine to the shrimp
- Cook the shrimp until they are done, they'll be pink and no longer translucent. About 3 to 5 minutes. Remove from heat
Building the Pizza
- Remove the shrimp from the pan and place the shrimp in a separate bowl. Brush the sauce in the sauté pan on the flatbread
- Add the mozzarella cheese to the flatbread
- Add the shrimp to the flatbread
- Sprinkle the parmesan cheese over the shrimp
- Place flatbread in the oven. We baked ours at 425 degrees. Cook until cheese is melted about 15 minutes
- Let Rest for 10 minutes. Enjoy!!!!
