I'm totally obsessed with these S'mores pancakes – they're seriously the best breakfast ever! Don't get me wrong, I love classic pancakes with maple syrup, especially since we had them often when I was growing up. My dad made the best maple syrup from the trees on our property. (Yes, Ohio has the best maple syrup!). And don't even get me started on Amy's favorite pancakes with blueberry and strawberry syrup – they are her jam! Now we both love these smores pancakes!!
But seriously, these S'mores pancakes take the cake! They're fluffy, tasty, and everything you could want in a pancake, s'mores combo. They're perfect for a happy morning start, a sweet ending to the day, or just to brighten up the afternoon. The only downside? We can't eat them every day unless we plan to run a few extra miles! Haha.
Why S'mores pancakes???
I have to confess that I haven't been a fan of s'mores for very long. In fact, I'm not even sure if I've ever had one over a campfire. I know Amy has because we made them when she was a kid. I guess the few times we went camping, I had to choose between a smores treat and a cocktail. So I let the kids have the s'mores, haha! Anyway, I'm totally blown away by these pancakes. They have all the flavors of a s'more but are even better!!! If you want to treat someone to a special breakfast or brunch, definitely consider making these s'mores pancakes. They're guaranteed to make you a superstar!
S'mores, not just for camping!!
These pancakes are super easy to make! If someone isn't into the S'mores version, they can just have the regular pancakes. But honestly, who wouldn't want chocolate, marshmallows, and graham crackers? If it were me, I'd ask them to leave the house!
Making the pancakes
Mix the pancakes. The ingredients needed are "dry" ingredients - all-purpose flour (also known as AP flour), baking powder, baking soda, sugar, salt, and "wet" ingredients - butter, egg, vanilla, and milk.
TIP: I like to sift the flour before measuring it because it seems to make the pancakes a little fluffier, and it only takes a few seconds!
Measure all the dry ingredients (flour, sugar, baking powder, baking soda, and salt). Sift the dry ingredients into a large bowl.
Melt the butter in the microwave, and then, using a whisk, stir in the "wet" ingredients: butter, egg, vanilla, and milk. Just make sure all the dry ingredients are mixed in with the liquids.
TIPS for fluffy smores pancakes
TIP: I like to give the pancake batter a rest for about 30 minutes. This helps develop the flavor and will give a nice fluffy rise to the pancakes. Don't over-stir the pancakes that can make a stiffer consistency and might not produce light and fluffy pancakes.
TIP: The batter can be made a day ahead and kept it in the fridge until you're ready to start flipping those delicious smores pancakes.
To make these delicious s'more pancakes, start by heating a pan on the stovetop and adding a teaspoon of olive oil to lightly coat the pan and prevent the pancakes from sticking. When the pan is nice and hot, pour in about ¼ to ⅓ cup of batter and add 5 or 6 chunks of chocolate. The pancakes will take about 1 to 1 ½ minutes to cook. Once they start to pull away from the sides and look golden brown underneath, flip them over and let them cook for another 30 seconds to a minute.
TIP: I love cooking pancakes over medium to low heat. It might take a little longer, but it's less likely to burn them, and they fluff up and cook perfectly!
After the s'mores pancakes are cooked, build the smores.
This is where everyone can get involved to build their own. Crush the graham crackers. I used the food processor to make it sure easy.
For the marshmallow, we used Marshmallow fluff, but you can melt marshmallows in the microwave. We used the fluff because it was easier. . . and really good. Melt some chocolate chips in the microwave or use Hershey's syrup.
Spread about a tablespoon of marshmallow fluff on the first pancake and sprinkle on some graham cracker crumbs. Repeat with the next pancake, adding more fluff and crumbs, then top with the third pancake and spread more fluff and graham cracker crumbs. Finally, drizzle on some melted chocolate, and for an extra fun twist, place a full-sized marshmallow on top and give it a toasty finish for that perfect campfire feel!

A Few Things We Use
Ingredients
- 1 ½ Cups AP Flour
- 3 ½ teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 Tablespoon Sugar
- 1 teaspoon Salt
- 3 Tablespoons Butter unsalted butter
- 1 Egg
- 1 ¼ Cups Milk
- 1 teaspoon Vanilla Extract
- 1 teaspoon Olive Oil
- 1 Cup Marshmallow Fluff
- ½ Cup Semi-Sweet Chocolate Chips
- 4 Graham Crackers
Instructions
- Sift together the dry ingredients (Flour, baking powder, baking soda, sugar and salt)1 ½ Cups AP Flour, 3 ½ teaspoons Baking Powder, 1 teaspoon Baking Soda, 1 Tablespoon Sugar, 1 teaspoon Salt
- Add the butter, eggs, milk, and vanilla extract to the dry ingredients.3 Tablespoons Butter, 1 Egg, 1 ¼ Cups Milk, 1 teaspoon Vanilla Extract
- Whisk the ingredients together until smooth. Takes just a couple of minutes. Let the pancake mixture rest for 30 minutes or more to ensure fluffy pancakes.
- Heat the olive oil in a pan over medium heat. Spread the oil evenly in the pan; just a light coating will do. You can also use spray cooking oil to replace olive oil.1 teaspoon Olive Oil
- When the pan is heating, pour the pancake mixture into the pan. ¼ to ⅓ cup of pancake mixture makes a nice-sized pancake.
- Add a few semi-sweet chocolate chips to each pancake. Cook until the edges of the pancake are dry and bubbles start to form, which should take about 2 to 3 minutes. Once the bottoms are golden brown, it's time to flip the pancake.½ Cup Semi-Sweet Chocolate Chips
- Flip the pancake and cook until browned on the other side. Takes less than 2 minutes usually.
- Finely crush the graham crackers. We use a food processor to crush the graham crackers. You can also put them in a ziploc bag and crush them with a rolling pin. Melt ¼ cup of the chocolate chips.4 Graham Crackers
- Spread about 1 Tablespoon of the marshmallow fluff on the top of the pancake and a teaspoon or so of crushed graham cracker. Place a second pancake on top and spread marshmallow fluff on that one and some graham crackers. Repeat these steps until you have the number of pancakes you want to eat.1 Cup Marshmallow Fluff
- Top the pancake stack with some of the melted chocolate.
- For additional fun, place a marshmallow on top and brown it with a kitchen torch.
