Lately, we've been occupied with painting all the walls and some doors, gardening, and other daily tasks. Sometimes work can interfere with leisure activities! Given our busy schedule, we decided to make a simple dinner. Luckily, we had a lot of meatballs in the freezer, so we decided to have Spaghetti with Turkey Meatballs, accompanied by steamed broccoli. It was a satisfying meal!
Since we recently upgraded our microwave, steaming vegetables has become much easier. I had to relearn how to make veggies in the microwave. The result is a vast improvement from our old one. I have discovered that spray butter or olive oil can add great flavor to vegetables. It is easy to prepare; just cut the broccoli into bite-size pieces, lightly spray it with the butter spray, sprinkle on some salt and pepper, put it in the microwave, hit the veggie button, and about two minutes later, it's done!
It was a guessing game with our old microwave for cooking veggies. But now, thanks to our upgraded model, they come out perfectly cooked every time without needing to cover them up with saran wrap or a glass lid. Finally, something easy in life. HaHa
Spaghetti Sauce
We recently found a tasty spaghetti sauce from Little Italy in Cleveland at our nearby grocery store. While I often prefer to add extra seasoning to the jarred sauce to suit my taste, I like to add water and spices to the sauce and let it simmer with meatballs for an hour or so. But, tonight, we heated up frozen meatballs in the sauce for about 15 minutes, which made dinner preparation a breeze! So, before we knew it, dinner was ready!
Leftovers!!!
I think leftover spaghetti and turkey meatballs are a great option for lunch or even a second dinner. The sauce seeps into them, making them even more delicious. Pasta dishes like spaghetti and meatballs, lasagna, and meatloaf always taste better the next day, so we always make extra for leftovers.
TIPS:
- Use 97% to 99% fat-free turkey
- MEASURE EVERYTHING!!!!!
- Grate the cheese with a small grater. It looks and feels like you are getting more cheese.
- It's unnecessary to add olive oil to the top of everything. Spices can add great flavor without adding calories.
- Save room for a glass of wine with the Spaghetti. Well, maybe no glass of wine if taking this to work for lunch!!

Spaghetti and Turkey Meatballs
A Few Things We Use
Ingredients
Meatballs
- 1 Pound Ground Turkey 99% fat-free
- 2 Cups Mushrooms
- 2 cloves Garlic
- 1 teaspoon Dried Oregano
- 1 teaspoon Onion Powder
- 1 teaspoon Sea Salt
Spaghetti
- 32 Ounces Spaghetti Sauce
- 1 teaspoon Dried Oregano Optional
- 1 teaspoon Dried garlic Optional
- 6 Tablespoon Parmesan cheese
- 12 Ounces Spaghetti
Instructions
Meatballs
- Preheat the oven to 400°F. Combine the chopped mushrooms with ground turkey, garlic, oregano, onion powder, and sea salt.
- Place the meatballs on a baking sheet and bake for 20 minutes or until done.
Spaghetti
- Place the jar of sauce in the saucepan and stir in the oregano and garlic. Add cooked or frozen meatballs to the sauce and heat. Simmer for at least 10 minutes.
- Cook the spaghetti according to the package instructions. We usually boil it for a little less than recommended, as it will finish cooking in the sauce. Once it's done, add it to a pan with the sauce and meatballs.
- Add the cooked spaghetti to the sauce, stir, and let it simmer for approximately 10 minutes.
- Serve with grated parmesan cheese.
