Spicy Grilled Caesar Salad and Steak
Hey, even on a diet there are still those days we want a nice juicy grilled steak. We were so excited on Tuesday when the sky cleared and stopped raining for one day and, the best part, the temperature hit 75!! Off to the store we went - it was going to be a grill day! And we were going to have a spicy grilled Caesar salad and a dainty little steak!!!
We bought a couple of Rib Eyes, Shiitake Mushrooms, Habanero peppers, and Romaine Lettuce. Oh, and Red Wine! I know you should salt and pepper the steak the night before but it's going to be several weeks before we have another day like this, and we were not going to miss this opportunity!
Grilled Salad is just fun.
Last summer, we saw someone grill a salad on one of these grilling shows. I thought how strange "grilled salad" was! So, we had to try this just to see if the salad tasted as good as the people on TV were saying. I mean, some of these recipes on TV are really unusal. I have to say, grilled salad is AMAZING!!!
So simple to grill a salad. Just cut the lettuce down the middle, spray it with olive oil, and add salt and pepper. Place face down on the grill. It will char some and only needs a few minutes. The cooking time all depends on how hot the coals are on the grill. Once the lettuce starts to char flip it over and leave for a couple of minutes.
Spicing Up the Salad
Of course, we had to spice up the salad. We grilled Habanero Peppers and green onions to add to the salad, and we always HAVE to toss a lemon on the grill. Never pass up an opportunity for grilled lemon!
The juice in a grilled lemon is just yummy, and it was a great addition to our spicy Caesar salad dressing.
Salad dressing for the spicy grilled Caesar salad
I needed a new way to make Caesar salad and didn't want the high-calorie dressing normally used. We're splurging by having the steak and wine, so we had to cut some calories somewhere. The salad dressing we came up with is one of the best dressings I have ever had. I'm very proud of this recipe. I hope you try it and enjoy it as much as we did.
The Grilled Habanero Pepper should only be added if you are BRAVE. . .very Brave! We love Roasted Garlic. If you haven't had roasted Garlic, I highly recommend making some for nothing else. It smells amazing when it is roasting. I am going to say Roasted Garlic has changed my life. Ok, I might have a boring life, but the flavor is so good, and the garlic is not as strong as fresh garlic.
This recipe is so fresh and amazing and has a nice zip from the Habanero pepper.
To make the grilled spicy Caesar salad - chop the grilled lettuce, chopped grilled onions, and drizzle the grilled lettuce with your desired amount of salad dressing. We only used half of the dressing for two heads of lettuce. I love Cesar Salad but the amount of calories in the salad dressing is crazy. I will only use this dressing from now on when I want a Caesar Salad.
We hope you enjoy this recipe as much as we did. And it was fun to make! Oh, and this dressing would be good on almost anything!!!
It was a perfect day and ended with an amazing meal. And a great glass of wine!!!!
