Have you ever considered combining spinach, peanut butter, curry powder, tomatoes, lemon juice, garlic, onions, and hot peppers in a single dish? It may sound strange, but trust us, this recipe is one of the best ways to enjoy spinach. To add an extra kick, we recommend adding tons of Thai peppers. However, if you're not a fan of spicy food, then go easy on the extra peppers. But if you love it hot, then feel free to add as many as you want, because this dish is definitely spicy!!
Spicy Peanut Spinach Recipe like no other!!!
This Spicy Peanut Spinach dish is incredibly creamy and flavorful with a spicy kick. While the combination of tomatoes, curry, and peanut butter may seem unusual, it actually works surprisingly well together. Each bite is a perfect balance of spinach, crunchy peanut butter, sweet tomatoes, and bright lemon juice. The curry brings all the flavors together, and if you're looking for some extra heat, you can add fresh Thai peppers for an extra kick. Overall, this dish is a tasty and unique way to enjoy spinach.

We also made pan-fried pork chops with just some Goya seasoning. The pork went great with the Spinach. Other dishes that also go great with the peanut spinach are Chicken Cordon Bleu, Grilled Chicken, or Pan Fried Salmon. Or have it as a veggie stand-alone dish.
We prepared pan-fried pork chops using only Adobo seasoning. They paired perfectly with the spinach. Other dishes that go well with peanut spinach include Chicken Chicken Cordon Bleu, Grilled Chicken, and Pan Fried Salmon. Alternatively, you can enjoy it as a standalone vegetable dish.
Simple directions to Pan Fry a Pork Chop
Here's a simple tip for cooking Pork Chops, which is a great addition to have with the peanut spinach. We like a Pork Chop that's 1 ½ to 2 inches thick. Pan-frying a Pork Chop is actually quite simple, despite the word "frying" being used. All you need is a tablespoon of olive oil, and you can easily pan-fry a Pork Chop. In fact, it's probably the easiest way to cook them.
To cook a perfect pork chop, heat up a frying pan and add one tablespoon of oil. Season the pork chop with your favorite seasoning, then place it in the pan. Brown one side for about 3 minutes, flip it, and cook the other side for another 3 minutes. Once both sides are browned, put the pan with the pork chops in a preheated oven at 375 degrees Fahrenheit. If you’re using a pork chop that is 1 and a half to 2 inches thick, it should take about 15 minutes in the oven to cook the pork chop perfectly. To ensure that the pork chop is cooked to your liking, use a meat thermometer. The meat thermometer we use is located below this post. You can stick the thermometer in the pork chop and check when it reaches your desired temperature.

This was truly an amazing dinner when we made the Spicy Peanut Butter Spinach and Pan-Fried Pork Chop dish. The combination of the spicy spinach and the juicy pork chop was incredible. The pork chop perfectly complemented the spinach and also balanced out the heat from the Thai peppers in the peanut butter spinach.
An alternate way to enjoy the Peanut Butter Spinach is by pairing it with Clams. Simply place the clams on top of the Spinach dish and bake it in the oven as per the recipe instructions in the recipe.

Boost Your Spinach Game: Peanut Spinach Recipe
A Few Things We Use
Ingredients
- 12 Ounces Frozen Spinach Large Bag
- 1 teaspoon Salt
- ½ Tablespoon Olive Oil
- ½ Onion
- 1 teaspoon Garlic Powder Or 2 Cloves fresh Garlic or 1 Tablespoon Roasted Garlic
- 1 Tablespoon Curry Powder
- 14 ½ Ounces Tomato Sauce Fire Roasted is best
- ½ Cup Chunky Peanut Butter (heaping cup!!! if you love peanut butter)
- 1 Tablespoon Cayenne Pepper Or 5 - 10 Fresh Thai Peppers Optional
Instructions
- Preheat the oven to 350 degrees. Heat frozen spinach in a pan over medium heat, adding ¼ cup of water, 1 teaspoon of salt, and some pepper. Cook for four minutes, then drain and set aside for later use.
- Chop the onion and sauté it in half a tablespoon of olive oil with garlic until it becomes soft and translucent.
- Add curry powder and optional peppers to the onions. Cook for one minute. The aroma is amazing.
- Add the Chopped Tomatoes and cook for 2 to 3 minutes.
- Stir in drained Spinach and Peanut Butter into the Tomatoes and Onion mixture. Continue to stir until the Peanut butter melts.
- Pour the mixture into a baking dish. If you're including clams, add them at this point. Bake at 350 degrees for 20-30 minutes, or until the spinach is bubbling. Enjoy!!!
