Ingredients

  • 12 Ounces Frozen Spinach Large Bag
  • 1 teaspoon Salt
  • ½ Tablespoon Olive Oil
  • ½ Onion
  • 1 teaspoon Garlic Powder Or 2 Cloves fresh Garlic or 1 Tablespoon Roasted Garlic
  • 1 Tablespoon Curry Powder
  • 14 ½ Ounces Tomato Sauce Fire Roasted is best
  • ½ Cup Chunky Peanut Butter (heaping cup!!! if you love peanut butter)
  • 1 Tablespoon Cayenne Pepper Or 5 - 10 Fresh Thai Peppers Optional

Instructions

  • Preheat the oven to 350 degrees.

  • Sauté the onion in ½ tablespoon of olive oil with garlic until it becomes soft and translucent.

  • Add curry powder and optional peppers to the onions. Cook for one minute. The aroma is amazing.

  • Add the Chopped Tomatoes and cook for 2 to 3 minutes.

  • Stir in Spinach and Peanut Butter into the tomato/onion mixture. Continue to stir until the Peanut butter melts.

  • Pour the mixture into a baking dish. If you're including clams, add them at this point. Bake at 350 degrees for 20-30 minutes, or until the spinach is bubbling. Enjoy!!!
