Preheat the oven to 350 degrees.
Sauté the onion in ½ tablespoon of olive oil with garlic until it becomes soft and translucent.
Add curry powder and optional peppers to the onions. Cook for one minute. The aroma is amazing.
Add the Chopped Tomatoes and cook for 2 to 3 minutes.
Stir in Spinach and Peanut Butter into the tomato/onion mixture. Continue to stir until the Peanut butter melts.
Pour the mixture into a baking dish. If you're including clams, add them at this point. Bake at 350 degrees for 20-30 minutes, or until the spinach is bubbling. Enjoy!!!
