Indulge in the irresistible taste of this spicy pinto bean recipe that's an absolute necessity for any side dish! The smoky ham blends in perfectly with the onions and pinto beans, while the subtle tomato flavor takes it up a notch. These beans have a unique texture and are not as sweet as the traditional baked beans. The serrano peppers add a fiery touch to the dish, and the oregano brings out the richness of the flavors. You will love the perfect balance of the spicy, smoky, and savory flavors in every bite.

The beans take only about 10 minutes to make.  First, in a medium-sized saucepan, heat 2 teaspoons of extra-virgin olive oil over medium-high heat. Add finely chopped onions and fresh serrano peppers. Allow the ingredients to cook for several minutes, stirring occasionally, until the onions become soft and start to turn translucent.

Next, add the beans, chopped ham, and fragrant oregano to a skillet. Sauté the mixture for approximately two minutes, allowing the flavors to meld together. Pour in the chicken stock, followed by the vibrant tomato puree.

Let the ingredients simmer and blend together for a full ten minutes until the mixture is heated through and the flavors have fully developed. Finally, add a pinch of salt and pepper to taste, or if you're feeling daring, toss in some extra Serranos for an added kick of heat to the spicy pinto beans.
