- 2 teaspoons Olive Oil
- ½ Cup Onion Chopped
- 3 Serrano peppers Chopped
- 9 Ounces 97% fat-free smoked ham Chopped
- 2 Tablespoons Dried Oregano Or you can use Thyme.
- 3 Cups Pinto Beans 2 cans of pinto beans drained
- 3 Cups Chicken stock
- 6 Tablespoons Tomato Puree
In a saucepan, heat two teaspoons of olive oil. Add chopped onions and chopped serrano peppers. Cook until the onions are soft.
Add beans, chopped ham, and oregano. Sauté for 2 minutes.
Add the chicken stock and tomato puree.
Cook for 10 minutes.
Add salt and pepper to taste.
Add additional Serrano peppers for more spice.
