- ½ Cup Onion Chopped
- 3 Serrano peppers Chopped
- 9 Ounces 97% fat-free smoked ham Chopped
- 2 Tablespoons Dried Oregano Or you can use Thyme.
- 3 Cups Pinto Beans 2 cans of pinto beans drained
- 3 Cups Chicken stock
- 6 Tablespoons Tomato Puree
Instructions
- In a saucepan, heat two teaspoons of olive oil. Add chopped onions and chopped serrano peppers. Cook until the onions are soft.
- Add beans, chopped ham, and oregano. Sauté for 2 minutes.
- Add the chicken stock and tomato puree.
- Cook for 10 minutes.
