Whenever I attend a BBQ, this is the side dish that I always go for first. A perfectly done potato salad is irresistible, and this recipe is easy to make and has an addictive zip that will keep you coming back for seconds (or even thirds). You won’t be disappointed!!!!
Spicy Potato Salad Recipe
So, we've been trying to watch what we eat and unfortunately, potato salad is one of those side dishes that we've had to cut out. But let's be honest, depriving ourselves of the foods we love never works out! We always end up overindulging the first chance we get. So, we decided to try and limit the calories in this delectable side dish. And you know what? It's so good that it can even be served as a main dish!
A few swaps we made in this recipe from the original recipe:
- Replace full-fat mayonnaise with Light mayonnaise mixed with fat-free or light sour cream. (This is a great technique; we use it for many other salads as well).
- For added flavor, boil potatoes in spices
- Add crunch to the salad by including celery and onion.
- Add more spice with fresh sliced jalapenos (optional)
- Use small red potatoes for a nice texture.
- Adding Apple Cider Vinegar to a dish provides a tangy flavor.
This is a spicy potato salad with lower fat content, but your guests won't be able to tell that it isn't made with full-fat mayonnaise. The combination of light mayonnaise and fat-free or light sour cream creates a creamy texture that mimics mayonnaise. Additionally, adding apple cider vinegar adds a tangy flavor that is sometimes lacking in low-fat and fat-free mayo.

Spicy Potato Salad
Ingredients
Prepare the Potatoes
- 1 Pound New Potatoes
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
Sauce
- ½ Cup Light Mayonnaise
- 1 Cup Light Sour Cream
- 2 Tablespoons Apple Cider Vinegar
- ½ teaspoon Salt
- ½ teaspoon Cayenne Pepper
- ½ teaspoon Garlic Powder
- ½ teaspoon Dried Mustard
- ½ teaspoon Thyme
- ½ teaspoon Black Pepper
- ¼ teaspoon Paprika
- 1 Clove Clove Garlic
Assemble the Potato Salad
- 1 Onion Chopped
- 3 Ribs Celery Chopped
- 3 Hard Boiled Eggs Optional
- 2 Jalapenos Optional
Instructions
Boil The potatoes
- To prepare the potatoes, start by rinsing them with cold water. Then, place them in a large saucepan and cover with cool water. Add 1 teaspoon each of salt, black pepper, cayenne, garlic, and onion powder to the potatoes and water. Bring the mixture to a boil. Cook the potatoes until they are just fork-tender, and then remove them from the water. Place the potatoes in the refrigerator to cool.
- After cooling, cut potatoes in halves or quarters and add to a bowl. Bitesize pieces.
The Sauce
- Mix together the spices, mayonnaise, sour cream, vinegar, and garlic until well combined.
Assemble the Potato Salad
- Chop the onion, and celery and add to the potatoes
- Gently stir the sauce mixture into the potatoes until they are thoroughly mixed together.
- Top with sliced hard-boiled eggs and jalapeno slices (optional)
