Spicy Potato Salad

Spicy Potato Salad is everything you crave in a good potato salad.  It's creamy, spicy, crunchy AND it's lower in fat and calories than a "traditional salad"

Ingredients

Prepare the Potatoes

  • 1 Pound New Potatoes
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder

Sauce

  • ½ Cup Light Mayonnaise
  • 1 Cup Light Sour Cream
  • 2 Tablespoons Apple Cider Vinegar
  • ½ teaspoon Salt
  • ½ teaspoon Cayenne Pepper
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Dried Mustard
  • ½ teaspoon Thyme
  • ½ teaspoon Black Pepper
  • ¼ teaspoon Paprika
  • 1 Clove Clove Garlic

Assemble the Potato Salad

  • 1 Onion Chopped
  • 3 Ribs Celery Chopped
  • 3 Hard Boiled Eggs Optional
  • 2 Jalapenos Optional

Instructions

Boil The potatoes

  • To prepare the potatoes, start by rinsing them with cold water. Then, place them in a large saucepan and cover with cool water. Add 1 teaspoon each of salt, black pepper, cayenne, garlic, and onion powder to the potatoes and water. Bring the mixture to a boil. Cook the potatoes until they are just fork-tender, and then remove them from the water.
    Place the potatoes in the refrigerator to cool.

  • After cooling, cut potatoes in halves or quarters and add to a bowl. Bitesize pieces.

The Sauce

  • Mix together the spices, mayonnaise, sour cream, vinegar, and garlic until well combined.

Assemble the Potato Salad

  • Chop the onion, and celery and add to the potatoes

  • Gently stir the sauce mixture into the potatoes until they are thoroughly mixed together.

  • Top with sliced hard-boiled eggs and jalapeno slices (optional)
