Prepare the Potatoes
- 1 Pound New Potatoes
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
Sauce
- ½ Cup Light Mayonnaise
- 1 Cup Light Sour Cream
- 2 Tablespoons Apple Cider Vinegar
- ½ teaspoon Salt
- ½ teaspoon Cayenne Pepper
- ½ teaspoon Garlic Powder
- ½ teaspoon Dried Mustard
- ½ teaspoon Thyme
- ½ teaspoon Black Pepper
- ¼ teaspoon Paprika
- 1 Clove Clove Garlic
Assemble the Potato Salad
- 1 Onion Chopped
- 3 Ribs Celery Chopped
- 3 Hard Boiled Eggs Optional
- 2 Jalapenos Optional
The Sauce
Mix together the spices, mayonnaise, sour cream, vinegar, and garlic until well combined.
Assemble the Potato Salad
Chop the onion, and celery and add to the potatoes
Gently stir the sauce mixture into the potatoes until they are thoroughly mixed together.
Top with sliced hard-boiled eggs and jalapeno slices (optional)
