Whenever we get a chance, we love to prepare Chinese cuisine. We've discovered that most of the dishes are quite simple to make. However, the most time-consuming part is preparing the spices, sauces, and vegetables. The cooking process itself is quick and straightforward. Recently, we created this Stir-Fried Garlic Noodles with Shrimp and Scallops, which we believe is our all-time favorite homemade Chinese dish. Of course, we can't forget about other classics such as General Tso's Chicken, Kung Pao Chicken, Broccoli stir fry, Beef and Broccoli, and many more. We enjoy making all of them!
TIPS:
- Make sure to measure all sauces before using them.
- Chop the Garlic and Ginger
- Slice the Mushrooms
- It's important to prepare everything ahead of time, and the actual cooking time should take less than 15 minutes.
Stir-Fried Garlic Noodles
This Stir-fried garlic noodle recipe requires less preparation time compared to other Chinese dishes. In less than 30 minutes, you can have the dish ready from start to finish. To save time, start boiling the water for the noodles while preparing the spices and sauces.
A few of the other stir fry recipes we love to make are General Tso's Chicken, General Tso's Shrimp, Kung Pao Chicken, Kung Pao Shrimp, Beef and Broccoli, Garlic noodles shrimp and scallops, Garlic green beans, Broccoli, and Sauteed Broccoli and Garlic.
Stir Fried Garlic Noodles With Shrimp and Scallops
A Few Things We Use
Ingredients
Sauce
- 1 Cup Chicken Stock
- 2 Tablespoons Oyster Sauce
- 2 Tablespoons Chinese Rice Wine Or Dry Sherry
- 2 Teaspoon Sesame Oil
- 1 Tablespoon Light Soy Sauce
- ½ Tablespoon Crushed Red Peppers Optional
Garlic and Ginger
- 2 Cloves Garlic
- 2 Tablespoons Ginger ½ ounce about 2 inches long
Shrimp and Scallops
- 12 Ounces Shrimp
- 6 Ounces Scallops
- 1 Tablespoon Cornstarch
- 1 Egg White
Snow Peas and Mushrooms
- 6 Ounces Snow Peas
- 5 Ounces Shiitake Mushrooms
- 2 Tablespoons Oil Peanut Oil or Olive Oil
- 6 Dried Hot Peppers Optional
- 2 teaspoons Cornstarch
Noodles
- 12 Ounces Egg Noodles
- 2 Tablespoons Peanut Oil Or Olive Oil
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Hot Oil Or 2 teaspoons Sesame Oil
Instructions
Egg Noodles
- Begin by boiling water and simultaneously mixing the sauce, and preparing the shrimp. Once the water is heated up, cook the noodles as per the instructions on the package. When the noodles are done, drain them and keep them aside.
Sauce
- Firstly, mix the following ingredients together to make the sauce: chicken broth, oyster sauce, dry sherry, sesame oil, soy sauce, and crushed red peppers. Once mixed, set the sauce aside.
Garlic and Ginger
- Chop or grate garlic and ginger.
Shrimp and Scallops
- First, remove the shells from the shrimp and then devein them.
- Cut scallops into quarters
- First, separate the egg white. Then, stir the egg white into the shrimp and scallops until they are coated evenly.
- Mix cornstarch with 1 Tablespoon of water.
- Mix the cornstarch mixture into the shrimp and scallops. Then, set it aside.
Mushrooms and Snow Peas
- Slice the shiitake mushrooms
- Snip the ends of the snow peas and remove the strings
Saute
- Heat Oil in a wok or large pan
- Add garlic and ginger and cook for about 30 seconds until fragrant
- Add Mushrooms
- Saute mushrooms, garlic, and ginger together until the mushrooms start to cook through. About 3 minutes
- Toss in the Dried Peppers (if using) to Mushrooms
- Add shrimp and scallops. Stir in with the shiitake mushrooms. Cook shrimp and scallops for about 5 minutes. Until the shrimp start to turn pink
- Add the snow peas to the shrimp mixture.
- Cook until they turn bright green - about one minute.
- Add the Sauce
- Mix 2 teaspoons of cornstarch with 2 teaspoons of water. Add to the shrimp mixture. Stir for a couple of minutes until the sauce thickens. Add additional cornstarch if the sauce needs to be thicker. (always mix the cornstarch with water prior to adding to the sauce).
- When sauce is thick place the mixture on a serving plate.
Egg Noodles
- Heat 2 Tablespoons of oil in the same pan (Wok) used to cook the shrimp
- Add drained egg noodles to the wok and toss. They will get a little Crispy. After about 3 minutes, remove from heat.Toss the noodles with hot oil and soy sauce.
Serving
- Place noodles in a dish
- Add the shrimp mixture with the noodles
- Enjoy!!!!
