This acorn squash is so yummy!!!!!
I grew up on a dairy farm, and we rarely had vegetables. We would have sweet corn, potatoes, and a few other veggies, but we never had squash, let alone a stuffed acorn squash! We recently tried something new and made stuffed acorn squash, which was incredibly delicious! The acorn squash has this perfect mix of sweet and savory flavors, and the stuffing was filled with creamy cheese that gave it a delicious kick. Plus, it's a guilt-free indulgence since it's light on calories. You have to give it a try!
The squash is stuffed with Ground Turkey, Rainbow Chard, Cheese, and Garlic. Of course, we used roasted garlic because, hello, we LOVE it on everything! The best part is how easy this is to make! The stuffing can even be made ahead of time, so if you're planning a party, what a great meal that your guests will LOVE and think you spent HOURS preparing!!

Whenever I go to the store, I come across various fascinating types of squash, but I'm unsure of what to do with them. However, this summer, we experimented with Patty Pan Squash, which made me appreciate the vegetable even more and opened up a whole new world of squash beyond just zucchini and summer squash.
So, as soon as acorn squash was at the grocery store, we knew we had to keep this experiment going!!!
Fall is a great time for Acorn Squash and Rainbow Chard
As I mentioned, I love anything stuffed and really wanted to try the Acorn Squash stuffed. It just came down to the question of how to stuff it. Let the experimenting begin!
I have been wanting to try rainbow chard as a new vegetable. Although we have grown it in our garden, we have never experimented with it before. Since we enjoy kale and spinach and cook with them frequently, I assume it won't be too different. However, I was pleasantly surprised by the cross flavor of spinach and kale in the rainbow chard. It has a slightly stronger taste than spinach but isn't as tough as kale. Rainbow chard pairs well with turkey, adding moisture and a pop of color to the ground meat, which can sometimes become dry. The mushrooms, garlic, and cheese complement the dish's flavors and make it even more scrumptious. I highly recommend trying it out!

Stuffed Acorn Squash with Ground Turkey, Cheese, and Garlic
Ingredients
- 1 Acorn Squash
- ¾ Tablespoon Olive Oil
- 8 Ounces Ground Turkey
- 1 teaspoon Black Pepper
- ½ teaspoon Onion Powder
- 1 ½ teaspoons Cumin
- 1 teaspoon Salt
- 2 Serrano peppers Chopped, Less if you don't like spice
- 1 Shallot Chopped
- 8 Ounces Rainbow Chard
- 6 Mushrooms Sliced
- 2 teaspoon Roasted Garlic
- 2 Ounces Feta Cheese
- 2 Ounces Sharp Cheddar Cheese
- 1 Tablespoon Cream Cheese (Whipped)
- 1 Tablespoon Parmesan cheese
Instructions
Acorn Squash
- Preheat the oven to 375 degrees. Cut squash in half and scoop out seeds.
- Spread olive oil over squash and sprinkle with salt and pepper
- Add ¼ inch of water to a baking dish. Place the squash face down, making sure both halves fit completely. Bake for 40 minutes.
- Flip the squash and bake an additional 10 minutes until fork tender.
Stuffing
- While the Acorn Squash is cooking make the Stuffing.Chop rainbow Swiss chard into pieces. Remove the stems and chop them separately.
- Saute the chard and stems in the pan with a ¼ cup of water. Salt and Pepper to taste
- Cook chard until reduced (about 5 minutes), stirring regularly
- Brown the turkey in a saute pan with 1 teaspoon of salt and 1 teaspoon of pepper (or to your preferred taste). If the turkey starts sticking to the pan, you can add a small amount of water for moisture. Once the turkey is fully cooked, mix in the sautéed chard and set it aside.
- Sauté the shallot, mushrooms, and roasted garlic (if unavailable, use 1 clove of chopped garlic). Mix the sautéed mixture with turkey and chard, and stir well.
- Mix crumbled feta, shredded cheddar, cream cheese, and chopped serrano into stuffing.
Stuffed Acorn Squash
- Scoop stuffing into each squash half. Sprinkle parmesan cheese on top of each squash.
- Place squash back in the oven for 20 minutes.
- Add chopped green onion and cilantro; if desired, serve. Enjoy!!!
